A good macaroni & cheese recipe-not baked, cooked over the stove!?!

Mac 'N Cheese
1 pound uncooked elbow macaroni
1/2 cup low-fat or fat-free sour cream
12-ounce can evaporated skim milk
4 ounces grated sharp Cheddar (about 1/2 cup)
4 ounces grated Monterey Jack (about 1/2 cup)
2 tablespoons Dijon mustard
1/8 teaspoon ground nutmeg
1 to 2 drops hot sauce, optional
Ground black pepper and salt
1/4 cup plain dry bread crumbs
1/4 cup grated Parmesan
Cook pasta according to package directions!. Drain and transfer to a large bowl!. While pasta is still hot, stir in sour cream and set aside!.
Scald milk by heating in a small saucepan over medium heat until tiny bubbles just appear around the edges!.
Add Cheddar and Monterey cheeses, mustard, nutmeg, hot sauce, pepper and salt to scalded milk!. Simmer until cheese melts, stirring constantly!.
Fold cheese mixture into pasta and transfer mixture to a serving platter!.
Combine bread crumbs and Parmesan in a skillet over medium heat!. Toast 1 to 2 minutes, until golden brown!. Sprinkle mixture over macaroni and cheese and serve!.Www@FoodAQ@Com

8 ounces low fat cheddar cheese (2 cups), coarsely grated
1 box (7 to 8 ounces) dried macaroni
Salt and pepper to taste
In a saucepan, melt butter over low heat!. Whisk in the flour and cook the mixture, stirring for 3 minutes!. Add the milk in a stream, whisking!. Bring the mixture to a boil and simmer for 3 minutes!. Stir in the cheese and cook until cheese is melted!.

1/2 cup chopped green pepper (optional)
1 t!. salt
1/4 t!. pepper
1/4 t!. oregano
1/2 t!. dry mustard
2 cups water
1 T!. flour
3/4 cup milk
2 T!. chopped pimiento (optional)
3/4 lb!. shredded sharp cheddar cheese
Melt butter in skillet!.
Add macaroni, onion, green pepper, salt, pepper, oregano & dry mustard!.
Cook, stirring occasionally, for 7 minutes, or until onions become transparent!.
Add water & bring to a boil!.
Cover & simmer until macaroni is tender!.
Stir in milk, pimiento & shredded cheese!.
Cook 5 minutes longer at a simmer until cheese has completely melted, stirring occasionally!.
Serve immediately!.

Add "cheese" mixture to pasta!. Stir thoroughly and allow to stand for around 5 minutes!.
That will allow you time to heat up some stewed tomatoes if you enjoy them with your mac and cheese!.

You can easily do it on the stove!. Boil up and drain your preferred pasta type (it doesn't have to be elbow), make a cheese sauce using just your regular milk and a mixture of cheese you like (we use shredded cheddar and colby jack), mix it with your pasta, of course you can put any type of seasoning you like in it!. Some onion powder, salt and pepper taste great!. You can add some flour into the cheese sauce to thicken if you need to!.
In a pinch just put the shredded cheese and milk into the same pan as the drained noodles and mix it up as the cheese melts, it works just fine and is easier!.Www@FoodAQ@Com
