Why are my cupcakes falling?!


Question: Why are my cupcakes falling!?
I am trying to make cupcakes and the first batch I made I followed the recipe below exactly however the cupcakes didn't really rise!. So for the second batch, I added a bit more baking powder and it rose beautifully while in the oven!. Once I took it out to cool it fell flat!. Does anyone have any ideas as to why this is happening!?

Ingredients

* 1 cup plus 2 tablespoons all-purpose flour
* 2 tablespoons cornstarch
* 1 1/4 teaspoons baking powder
* 1/8 teaspoon salt
* 3/4 cup granulated sugar
* 2 large eggs, at room temperature
* 1 1/4 teaspoons pure vanilla extract
* 4 tablespoons unsalted butter, melted
* 1/4 cup vegetable oil
* 1/2 cup milk, at room temperature

Bake for approximately 20-23 minutes at 350 degrees!.Www@FoodAQ@Com


Answers:
Cornstarch is a thickening agent, not a riser!. You do have too much of the liquid ingredients for the amount of flour you are using!. You need to increase your flour to at least 2-1/4 cups of flour and increase the baking powder to 2 teaspoons!. If your batter is too thick, you can add a little milk until it's the right consistency, but I'm thinking what I suggested might work!.Www@FoodAQ@Com

The baking powder and the cornstarch cause it to rise!. If you forgot to add one of these ingredients then that can definitely cause then to fall!. Or if either of these ingredients are old!. Then they do not work as well!. If the muffins taste good then eat and enjoy!. They should taste good if you did use the starch and powder!. If they are not getting old, then next batch you could increase the baking powder by 1/4 teaspoon!.Www@FoodAQ@Com

it seems this recipe is a bit runny, there is a lot of liquids in it and not much flour!. Adding more bi-carb will make the recipes rise, but wont provide anything to make the cupcakes hold their shape!. I recommend adding the same amount of extra bi-carb, but also put in maybe 1/3-1/2 cup more flourWww@FoodAQ@Com

Cool them upside down on a cooling rack!. Obviously if you cool them rightside up, gravity will do its job and pull them down!. For some reason, people think it will make their cupcakes look distorted or something but that's nothing frosting can't fix!! Hope that helps!Www@FoodAQ@Com

A) Try to slightly reduce the amount of liquid used in the mix!.
B) It could be that you're opening the oven door too early!. I do that with my cakes and then they collapse!.Www@FoodAQ@Com

either your baking soda or baking powder has expired!.!.!. that happened once to me before!. sorry!.Www@FoodAQ@Com
