it wouldn't be called Risotto!.
Aborio is very starchy and no other rice would be suitable!.
You can make a regular white rice with the same recipe as you would make Arborio and it would be good, but it wouldn't taste like Risotto!.

I agree with jc and I also know that Arborio rice is hard to find!.!.!. I bought 3 pounds of it in South Texas a few months ago!.

If you absolutely MUST make a Risotto with domestic rice, then use the long grain rice, it's the closest to Arborio rice!.!.!. and I got that from the factory store at a rice mill!.Www@FoodAQ@Com

Regular grain rice will absorb the chicken stock closely to Arborio!. However, it is not going to give you the same results, but the flavor will be the same!. The tooth bite will be different, and the texture just a bit different!. But the regular rice will work!.Www@FoodAQ@Com

yes, arborio is a heavly starched rice, i'm not quite possitive, but i'm preety sure, there's not much difference, i think aborio may be a risotto!.Www@FoodAQ@Com

Arborio is the one you need - it is short grain and makes a starchy liquid unlike other rices!.

You could make up your own adaptation with anohter short grain rice but it would not be traditional risotto!.Www@FoodAQ@Com

While the best choice is arborio, it doesn't have to be arborio but it MUST be short grained - Long grained rice WILL NOT WORK!.Www@FoodAQ@Com
