What to have with bbq chicken?!
Looking for a side dish to have with bbq chicken and baked beans beside the traditional pasta salad and potato salad!? Any ideas!?Www@FoodAQ@Com
Answers:
mac 'n' cheese, baked potato, coleslaw, collard greens, corn on the cob!.Www@FoodAQ@Com
cole slaw, corn bread!.
For something a little lighter and brighter, try making skewered veggie kabobs!. There are a variety of veggies you can grill, but some of the more delicate and exotic options will seem strange alongside the traditional, hearty baked beans!.
Here's what I would do: Cut chunks of red bell peppers (or a combo of red, yellow and orange - NOT green)!. Alternate with chunks of sweet onion on metal skewers!. Keep the onion pieces a couple of layers thick, not a giant chunk!. Try to make the pieces approximately the same size to maximize grill contact!. Brush with olive oil or a combo of olive oil, balsamic and rosemary!. Grill until the center is softened and the edges are a little charred!.
(optional) also have a few skewers of whole, medium-sized mushrooms, brushed with the balsamic, oil and rosemary mixture, season with salt!. (Better not to combine them on the pepper and onion skewer because they won't get maximum grill contact)!. Skewer the mushrooms through the middle of the stem!.
This dish is very forgiving about cooking time and is perfectly fine served at room temp!. Remove the veggies from the skewers before serving!.
