Marinade with Coke in it?!


Question: Marinade with Coke in it!?
The chef at a 5 star restaurant I used to work with used to marinate tough meat in Coke, soy sauce and some other stuff I can't remember!. Can you help me out!? I have some bottom round to grill!.Www@FoodAQ@Com

The carbonation & chemicals are supposed to break down the tissue in the meat to tenderize it !.!.!.!. I'd add some Tony Chachere's Creole Seasoning, a little chili powder, garlic powder, and oregano (and leave out the soy sauce)!. If you want it more of a teriyaki flavor, use the soy sauce with some ginger and chopped green onions, sesame seeds !.!.!.!.!.!.!.!.btw: scary thought, but coke is supposed to be the best toilet cleaner too! You just pour it in there and it supposedly gets rid of lime deposits! Just think what it does to your stomach!Www@FoodAQ@Com

From what I remember it is the sugars that breakdown the heavier meat fibers ( as well as the smaller more tender ) hence the use of sweet ingredients with other flavors in barbecue sauces!. When I make my own BBQ sauce I use thick agents such as honey , molasses, brown mustard's and to spread the ingredients there will be cola or sprite depending on color of base ingredient!. You will remember that brown sugars and maple syrup are used in many recipes as well as bur ban whiskey!.Www@FoodAQ@Com

Coke Marinade

12 ounce can Coca Cola
1/2 cup orange juice
onion powder
garlic powder
pepper
salt
paprika
bay leaf

Mix Coca Cola and orange juice!. Add seasonings to taste!.Www@FoodAQ@Com
