one is
Sauerkraut mit Speck
and the other is
Bavarian Speckknoedel

Sauerkraut mit Speck:
serve that together with mashed potatoes, or roast potatoes (I prefer mashed; it enables everyone to "water down" the "sauer" part of the Sauerkraut according to their individual taste)!.
If you use lots of Speck, you don't need any other componnent; but if you want an additional meat dish, Bratwurst is the way to go!.!.!.!.!.
Either the potatoe dish or the Bratwurst should come with a lot of slightly roast onion rings!.

funny enough, Suaerkraut is one common dish served with that!.
As a meat dish, anything pork or beef that is roast!.
It is absolutely vital to have a good gravy with the Kn?del!.


As you can see, there is no real vegetable dish that goes with Sauerkraut - one reason is the taste, another is that Sauerkraut is a traditional winter dish, when people used to have not much access to vegetables!.

For additional vegetables to go with Kn?del: Carrots or Rutabaga are an option, cooked in a pan with a bit of oil and only as much water as absolutely necessary!.


The traditional Christmas-y option: Duck or Turkey, with Kn?del and Red Cabbage!.Www@FoodAQ@Com

With the Sauerkraut with Speck, we would serve Rippchen (ribs), or Bratwurst and add another side of mashed potatoes!.

With the Speckknoedel we would serve a German Potroast (Braten), Gulasch (Beef-stew) or even a Schnitzel (add gravy to the Schnitzel dish ,so the Knoedel can soak it up)!.
Add some Blaukraut (blue cabbage) to the side or Kohlrabi (my favorite) and your meal is complete!.
In hotter months just make a Gurkensalad (cucumber-salad) as an extra side!.

You can also serve Kassler with either one ,which is salt-smoked pork (usualy the loin)!.
The closest here would be smoked pork-chops!.Www@FoodAQ@Com

Sweineflaush und kartuffellin, which means pork and potatoes!. Germans love pork of all kinds, from pork sausages to pork chops to pork roasts!. They also eat potatoes of all kinds with almost every meal!.
