*Chinese Chicken and Broccoli
1 lb boneless skinless chicken breast
2 teaspoons cornstarch
1/4 teaspoon pepper
3 green onion, with tops
1 medium carrot
2 tablespoons black bean garlic sauce
2 teaspoons garlic, finely chopped
1 teaspoon gingerroot, finely chopped
1 teaspoon sugar
10 ounces broccoli, cut into small pieces
1/4 cup fat-free chicken broth
Cut chicken into strips!.
Toss chicken, cornstarch, salt and pepper in medium glass bowl!.
Cover and refrigerate 20 minutes!.
Cut green onions and carrots into thin slices!.
Mix black bean sauce, garlic, gingerroot, and sugar together!.
Spray a 12-inch skillet with nonstick cooking spray!.
Heat until spray bubbles, add chicken and cook until chicken turns white!.
Remove chicken from the skillet!.
Reheat skillet and add chicken broth!.
Add broccoli and carrot; cover and cook 1 minute or until vegetables are crisp tender!.
Add chicken, brown bean sauce mixture and green onions;
cook and stir 2 minutes!.

4 boneless, skinless chicken breasts, butterflied and lightly pounded
8 oz Mushrooms, shiitake, dried (about 1 cup)
1 lb Broccoli, fresh, chopped (one head)
3 tbsp fresh ginger root, minced
3 tbsp garlic cloves, chopped, minced
1/2 cup scallions, chopped
2 tsp safflower oil
1 tsp sesame oil
1/3 cup low sodium soy sauce
2 cup water
2 tbsp cornstarch
Soak the shiitake mushrooms in a bowl of warm water till pliable and soft, 20 minutes!. Remove them straining the soaking water through a sieve or cheese cloth and reserve water!. Slice up the mushrooms and set aside!.
Meanwhile, slice up the chicken into thin pieces and coat with 1 tbsp!. soy sauce, sesame oil, and 2 tbsp!. cornstarch!. Allow the chicken to marinate for 20 minutes!.
In a heated wok or large sauté pan, add the safflower oil and briefly fry the chicken strips!.
Add the ginger and garlic and toss together coating evenly!. Add the broccoli and 1/2 of the shiitake water to the pan and cover steaming for 5 minutes until the broccoli is cooked!. Add the scallions and remaining soy sauce to the pan and cook 1 minute longer!.
#Note-U can Omit the cornstarch to make a broth instead of a sauce!.

3 c!. Chinese cabbage (Bok Choy)*
2 tsp!. cornstarch, dissolved in 2
tbsp!. water
*Trim Chinese cabbage of all but 1 inch of green tops and slice diagonally; slices diagonally in 1/2 inch pieces (sliced regular cabbage may be used)!. In medium bowl, stir together soy sauce, dry sherry, sesame or vegetable oil, garlic, ginger, sugar, and sesame seeds!. Add chicken and marinate at least 1 hour!. In a wok or skillet, heat peanut oil over medium heat for 2 minutes!. Add onions, broccoli, and cabbage!. Stir fry 1 minute!. Transfer to dish; set aside!. just blanche broccoli for 3 minutes & stir fry chicken strips !.!.!. in garlic and oil!.!.!.blend all together and add your favorite chinese jar sauce they have a bunch of spicy ones in the grocery store that i like alot or just add soy sauce and whalla!.!.dinner servedWww@FoodAQ@Com
