When I worked as a seafood manager, we used to make a wonderful zesty crab salad with imitation crabmeat!. Here's the recipe!.!.!.

Zesty Italian Crab Salad

2 pounds imitation crab meat
10-12 roma tomatoes, diced
2 red bell peppers, diced
2 green bell peppers, diced
2 yellow bell peppers diced
2 ribs celery, diced
2 10!.5 ounce bottles Kraft Zesty Italian dressing

Mix all ingredients together in large serving bowl!. Allow to marinate, covered, in refrigerator for 2-3 hours or overnight!. Serve chilled over lettuce/spinach leaves!. Serves 20-24!.

I enjoy it with mayo!. But I believe there are several kinds of imitation crab meat, some with no crab at all, some with 40% crab and the rest white fish!. You probably need to make sure what kind of imitation crab meat you like!.Www@FoodAQ@Com

Well, it depends on how you're using it!. If you're putting it in a crab salad or pasta salad, I would suggest adding a bit of Old Bay Seasoning and a dash of lemon juice!. I use both when I make my crab dip!.Www@FoodAQ@Com

Add your own favorite seasoning mix to the crab meat and let it marinate overnight before use!.Www@FoodAQ@Com

By throwing it out, and buying fresh lump crab meat at the supermarket!.

Mix it with some cream cheese and salsa - great for a sandwich or wrap or spread on a cracker!.Www@FoodAQ@Com
