Why do some of my sopapillas 'puff' and not others?!
I'm talking about in the same batch, same pan!. I use a deep fryer!.

It really just depends on the oil temperature!. Don't overcrowd your frier so the temperature remains the same throughout the cooking process!.Www@FoodAQ@Com
i would think it depends on if you roll out all the air!. if air enters and can't escape, it will puff, but if air doesn't get in, it won'tWww@FoodAQ@Com
