Soak potatoes before frying?!
I'm having company over tomorrow night!. I want to make a veggie stir-fry, but I'd like to do all the prep work tonight, so I won't be cutting veggies instead of spending time with my guests tomorrow evening!.
So, my question is!.!.!. how can I keep the potatoes fresh if I peel them tonight!? Can I soak them overnight in water in the fridge!? Then fry them tomorrow!?Www@FoodAQ@Com

most defiently, cut potatoes can be kept in cold water for up to a week, along with any cut vegetables!. and soaked potatoes also fry up better because all of the starch has been dissapated by the water, just change the water twice!.Www@FoodAQ@Com
you can soak them in a pot and put a clean dish cloth over the tops to keep everything wet so they dont turn brown!. you could also pre cook them tonight and then its that much less time in the kitchen tomorrow when your guests are there!.Www@FoodAQ@Com
Put SALT in the water, or else they will turn brown (not lemon, it could mess up the flavor of your cooking)!. Make sure you cover them with lid overnight!. Put them through a strainer, rinse with cold water and let them dry before you fry!.Www@FoodAQ@Com
Yes, you can submerge them in cold water and a little lemon juice to keep them from browning and store them in the fridge overnight!.Www@FoodAQ@Com
We did that when I was achef, and it works fine, if you want to cut them into the fries your using that is all right to, alot depend on the potatos some need to be rinse of there starch before frying!.Www@FoodAQ@Com
yes it's fine!. just make sure you don't put dripping wet potatoes into hot oil!. bad things happen when water meets hot oil!. dry them thouroughly!.Www@FoodAQ@Com
