*Honey and Cider Squirrel

8 young squirrel, dressed & halved
1 cup honey
3 cups apple cider
4 bay leaves, crushed
2 TBL cornstarch
2 TBL water

Pat squirrel halves dry!. Place on rack in broiler pan!. Coat with half the honey!. Broil 6 inches from heat source for 8 minutes!. Turn!. Coat with remianing honey!. Broil for 8 minutes longer!. Place in roasting pan!. Pour cider over squirrel!. Add bay leaves!. Roast @ 350 degrees for 1 hour or until tender!. Remove to serving platter; keep warm!. Strain pan drippings into saucepan!. Dissolve cornstarch in water; stir into pan drippings!. Cook over medium heat until thickened, stirring constantly!. Serve with squirrel!. May serve with crisp shoestring potatoes and green salad!.

*Bacon-Fried Squirrel

8-9 young squirrels each cut 6 to 8 pieces
1/2 tsp salt
1/2 tsp freshly-ground black pepper
1/2 tsp garlic powder
1/4 cup all-purpose flour
9 slc bacon chopped
1/2 cup onion sliced
4 celery stalks sliced
4 tbl fresh rosemary leaves minced
4 tsp lemon juice
2 cup chicken broth
5 cup warm cooked rice

Combine salt, pepper, garlic powder and flour!. Dredge squirrels in flour mixture!.Cook bacon in a heavy skillet over medium heat until browned!. Fry squirrel pieces in bacon grease until medium brown!. Add remaining ingredients and reduce heat to simmer!. Cover and cook for about 1 1/2 hours or until squirrel pieces are tender!.Serve with warm rice!.
# TIP: Anything fried, squirrel included, tastes pretty good!. The squirrels are first fried and then simmered in liquid until tender!. Young squirrels taste much better than old ones!.

*Pork Rind-Crusted Fried Squirrel with Molasses Red-Eye Gravy

9young squirrels, dressed and quartered
3 yellow onion, roughly chopped
5 stalks celery, roughly chopped
5 carrots, roughly chopped
9 cloves garlic, peeled
1 1/2 gallon water
1 1/2cup apple cider vinegar
1-1/2 cups lard
1-1/2 cups peanut or vegetable oil
3 cups all-purpose flour seasoned with salt, black pepper, paprika, onion powder, and garlic powder
2 cups pork rind powder (see recipe headnote)
2 cups milk
4eggs, lightly beaten
3/4 tablespoon freshly cracked black pepper
Salt, cayenne powder, and Tabasco, to taste
-Tasso and Molasses Red-Eye Gravy
1/3 cup tasso or other thick-sliced ham, diced
1 cup bacon, diced
1 tablespoon flour
1-1/4 cups beef stock
3/4 cup strong black coffee
1/3 cup Coca-Cola
2 tablespoons molasses
1/2 teaspoon red pepper flakes
Salt and freshly ground black pepper, to taste

Generously season the squirrel pieces with salt, pepper, and cayenne; allow to sit for 2 hours!.

Whisk together the milk and eggs with a dash of Tabasco!. Dust the squirrel in the seasoned flour and set aside!. Add the pork rind powder to the remaining seasoned flour and combine well!. Dunk the squirrel in the egg wash, then dredge them in the pork rind and flour mixture, shaking off any excess!. Fry the pieces until golden brown, working in batches!. 1 pkt Cream cheese (8 oz) - cut 1" cubes,softened
3/4 cup Milk
1 pkt Frozen mixed vegetables - (16 oz) defrosted, drained
(broccoli, carrots, and cauliflower)
3 cup Cooked rainbow fusilli or rotini
2 cup Cubed cooked squirrel - (8 to 10 oz)
1 can Sliced mushrooms - (4 oz) drained
2 tbl Dijon mustard
1/2 tsp Dried dill weed
1/4 tsp Salt
1/4 tsp Freshly-ground black pepper
1/2 cup Shredded fresh Parmesan cheese

In 3-quart saucepan, combine cream cheese and milk!. Cook over medium heat for 4 to 6 minutes, or until mixture is smooth, stirring constantly!. Add remaining ingredients, except Parmesan cheese!. Cook over medium-low heat for 5 to 7 minutes, or until mixture is hot, stirring occasionally!. Sprinkle each serving evenly with Parmesan cheese!.

*Squirrel in Cream

8-9 small squirrels
cut up 1 onion -- finely chopped
1teaspoon leaf thyme
19 oz can sliced mushrooms -- drained
2 cup beef bouillon
2 cup sour cream
2 tablespoons lemon juice
6 tablespoons flour
minced parsley

Marinate squirrl overnight in refrigerator in salted water!. Before cooking, remove squirrel pieces; drain and pat dry!. Place squirrel, onion, thyme and mushrooms in Crock-Pot!. Pour in bouillon, moistening well!. Cover and cook on Low for 8 to 10 hours!. Before serving, turn to High!. Combine sour cream, lemon juice and flour!. Remo ve squirrel to a warm platter!. Stir sour cream mixture into Crock-Pot!. Cook until thickened!. Spoon sauce over squirrel and sprinkle with parsley!.

*Crockpot Fried Squirrel

8-9 squirrels, cut into serving pieces
your favorite seasonings
flour
butter flavored Crisco
heavy foil
water

Season the meat to taste with your favorite seasonings!.Roll in flour!.Heat the Crisco in a large skillet!.Add the squirrel pieces!.Cook over medium heat until golden brown!.Line a crockpot with a double layer of foil!. Roll the top edge of the foil and make sure it won't touch the lid!.Pour a cup or two of water in the crockpot under the foil!.When the squirrel is done, carefully place in the crockpot making sure no holes get punched in the foil!.Cover and cook on high 4 hours!. Add more water if you think it needs it half way through!.Serve!.

*Chicken Fried Squirrel

OldBay seasoning

Soak your meat for at least an hour in buttermilk!.Combine the flour & OldBay until you can see the flour turn light pink!. Sprinkle in some salt and pepper to taste!.Heat up your shortening to 375 degrees in a iron skillet or deep fryer deep enough to cover the meat!.Roll or shake your meat in the flour mix and fry until the coating is golden brown!. Take it out and place it on a rack to drain!. Place it in your oven for about 1/2 hour at 275 degrees!.

*Slow Cooked Squirrel

9squirrels - skinned, gutted, and cut into pieces
6 large potatoes, quartered
2 pound carrots, chopped
4 green bell pepper, chopped
4 onions, sliced
2 cups water
1/4 medium head cabbage
1 teaspoon salt
1 teaspoon ground black pepper

In a slow cooker, place the squirrel meat, potatoes, carrots, green bell pepper, onions, water, cabbage, salt and ground black pepper!.Cover and cook on low setting for 8 hours

*Fried Squirrel with Mushroom Gravy

9 squirrels, cut into serving pieces

4 eggs, beaten
4-5 pieces bacon, chopped
2 medium onion, chopped
2 can cream of mushroom soup
2 soup can milk

Season the flour to taste with salt and pepper!. Place in a bowl!. Beat the eggs in another bowl!.Heat some oil in a large skillet!.Dip the squirrel pieces in the egg and then the flour!. Repeat if you want!. Add to hot oil!.Fry until golden brown!. Remove and drain fat!. Return to skillet!.
Cover with the bacon and onion!.Mix the soup and milk together and pour over meat!.Cover, reduce heat and simmer for 2 hours!.Serve with mashed potatoes and dinner rolls!.

*Tart-N-Tasty Squirrel

3 pounds squirrel, pieced
1/4 cup olive oil
1/2 teaspoon crushed black pepper
1/3 cup fresh lemon juice
1 teaspoon sugar
1 teaspoon paprika
1 teaspoon prepared mustard
1 teaspoon salt
1 teaspoon celery salt
1 teaspoon garlic powder

Season squirrel with salt and pepper!. Heat olive oil and brown squirrel!. Remove squirrel, drain skillet!.In a mixing bowl combine all remaining ingredients, mix well!. Place squirrel back in skillet, add mixture, stir to mix!. Cover and simmer for about 45 minutes, serve!. Serve with mashed potatoes or french fries, fresh salad, and hot bisquits!.

*Squirrel Casserole

8-9 squirrels
2 bag egg noodles
2 cups corn flakes
4 stick butter, divided
1 tsp garlic powder
2 tsp onion powder
1 cup flour
3 cans chicken broth
2 tsp thyme
2 tsp salt
1 tsp black pepper
2cups shredded mozarella cheese
1 cup durkee/frenches fried onions

Boil the squirrels in a large pot until the meat starts to fall off the bones!. Remove and cool!. When cool debone!. Set aside!.
While the squirrels are cooking, cook the noodles per package directions!. Drain and set aside!.In a saucepan, melt 1/4 stick of butter!. Stir in the cornflakes, garlic powder and onion powder!. Heat until crispy!.Spread the cornflakes in the bottom of a greased casserole dish!.In a saucepan, melt the remaining butter!. Add the flour and brown just a little!. Add the chicken broth and stir until thick!.Remove from heat and add the thyme, salt, pepper, squirrel meat and noodles!. Mix well!.Pour the mixture evenly over the cornflakes!. Top with the cheese and the fried onions!.Bake for 45 minutes at 300 degrees!.Serve

*Spicy Squirrels

8-9 squirrels
bbq sauce
ketchup
water
minced onion
pepper
your favorite spices

In a bowl mix some bbq sauce and ketchup together to taste!. Slightly water it down!. Adjust taste if needed!.Rub the sauce into the squirrels!.Place on hot grill!.Sprinkle with the onion, pepper and spices!.Cook on low for 1 - 1 1/2 hours basting occasionally with the sauce!.Serve

Well for a family of 7 you probably only need about 3 good sized squirrel!. So you've got a few meals there!.

Based on a number of times cooking it, I would recommend either fricasseeing it or making a cacciatore!. They will be the best way because you can slow cook the meat while it is in the sauce!.!.Www@FoodAQ@Com

My favorite is to dredge the squirrel in flour, salt & pepper & fry in medium hot grease until golden brown!. Not too much grease!. Add a whole bunch of cut up onions, bay leaf & some chicken broth to keep it from sticking!. I use an electric skillet & put the lid on & cook/smother the squirrel slow until it falls apart!. This is so good with mashed potatoes!. My sister use to make squirrel & dumplings!.Www@FoodAQ@Com

Sometimes we always fry our cut up squirrels in hot grease!. Salt your cut up squirrels and dredge them in egg wash and flour and fry until brown!. YUMMY!!!
