When my in-laws were in town, we were always on the go!. One of the things I served was some Lloyd's BBQ on hamburger buns!. Delicious!. It comes in a container (we got ours at Walmart) and you just warm it up!. I served with it, corn on the cob, potato salad (again a container from walmart) and watermelon for dessert!.Www@FoodAQ@Com

1) Publix sells a ready taco mix - you can either get chicken or beef!. You just microwave it for 5 min, then chop your lettuce, tomatoe, avacado, or whatever you like!. I serve mine on a platter along with shredded cheese, sour cream, and tortillas!. It's super easy and yummy!.

2) Another quick meal I like is my version of Shepard's pie!. You'll need mashed potatoes, 1 onion, mushrooms, 1 bag of frozen peas & carrots, 1 lb beef or steak, and brown gravy mix & worcestershire sauce!. I use the ready microwavable mashed potatoes (they're in a tub in the refrigerated section, by the taco meat)!.

Brown the meat, add the onions - they cook for about 5 min until soft, add the gravy and follow the directions to make it, add the veggies - cook for a few min, add some worcestershire , microwave the potatoes, then put it all in a casserole dish- meat mix on bottom, potatoes spread on top!.

3) Another great one, if you like pasta, is tortellini soup!. You need: 2 9oz packs of cheese tortellini, 1 can of diced tomatoes, 5 cups of chicken broth, 1/2 cup of diced green onions, and a couple teaspoons of basil!. Add it all to a large pan, boil on medium high until the tortellinis are soft, about 10 mins!. I add shredded parmesan cheese on top!. It's delicious and really filling!.

=) Good luck!.Www@FoodAQ@Com

Brown a pound of ground beef (do not drain grease) add 1 pack of taco seasoning!. While this simmers for about 15 min, line the bottom of a casserole dish with 6 corn tortillas add the ground meat, layer 6 more corn tortillas on top!. Add one can of cream of mushroom/chicken soup!. Add 8 oz (1 package) shredded cheese, add 1 cup of milk!. Cover with foil and bake, at 350, for about 30 min(or until cheese is melted) serve with ranch style beans or alone!. This is an easy and quick enchilada recipe!. Good luck!.Www@FoodAQ@Com

My new fast and favorite week night meal is from Ellie Kreiger on the Food Network!. Run by the store on the way home and pick up a few fillets of fresh cod and some slices of prosciutto!. Wrap each piece of cod with the prosciutto and then cook in a skillet or grill pan!. (Recipe is here: http://www!.foodnetwork!.com/food/recipes/!.!.!. )!. No fuss, no seasoning or marinating, but the prosciutto seasons the fish perfectly!. Takes less than 10 minutes and it's delicious! This is my favorite quick dish for surprise company!. Pair it with some minute rice and some steamed veggies and you've got a complete meal, that's healthy, too!Www@FoodAQ@Com
