Question: Hey you chefs!!! cooking question!?
i want to make shrimp scampi for dinner !.!.!. but i dont have lemon juice and i just got back from the store so there is NO way i am going out again!. i am 8 mos pregnant and TIRED, lol!. sooo !.!.!. should i just go without it OR should i use a little bit of lemonade!? i have some pink lemonade (a good one, organic, not from a powder mix)!? what do you think!?!?!?Www@FoodAQ@Com

I really don't advise you to use lemonade, as it will make the dish sweet!. Try a white wine, or, I often substitute cooking wine with chicken broth (from a can or bullion cube), and it turns out well!. You could also go with a garlic cream sauce- a little milk, butter, flour and garlic, and toss it in the pasta with the shrimp!. Yum!.

Please, PUH-LEASE do not use lemonade!.

If you're not going back out (can't blame you) just replace it with equal part white wine/vermouth!. Won't be the same, but won't kill you either (it's ok - a tablespoon or two won't hurt you, it's going to cook out/reduce anyway!.!.!.)

CONGRATULATIONS ON THE ALMOST NEW ADDITION TO YOUR FAMILY!!!!!!!!! I'm so happy for you and understand your fatigue!. This recipe is from an Authentic Italian Cooking website and it does call for fresh lemon juice!. I personally have never made it with Lemon in my 20+ years of experience but I know several places that do!. I guess it's just a personal preference of the Executive Chef!. I do not recommend that you use the Pink Lemonade at all, it seriously would ruin the dish (in my opinion)!.

Shrimp Scampi
Serves 4-6 as an appetizer
16 jumbo shrimp, cleaned and de-veined
8 tablespoons of unsalted butter, softened
2 cloves of garlic, minced
2 tablespoons parsley, finely chopped
1 teaspoon salt
1 teaspoon freshly ground pepper
2 lemons, cut in half
1/2 cup fish or chicken broth
1/2 cup white wine
1 tablespoon of paprika

1!. Preheat oven to 400 degrees!. In a large bowl, add butter, garlic, parsely, salt, pepper and juice of one lemon, mix until well combined!.
2!. Place shrimp in a baking pan just large enough to fit them!. Place 1/2 tablespoon of the butter mixture on each shrimp!.
3!. Add white wine and broth to the pan, making sure not to cover the shrimp completely!.
4!. Place the pan in the oven and bake for 5 minutes!. Remove pan from oven, squeeze juice from the remaining lemon on top, sprinkle with paprika, place back in oven and cook for 8-10 minutes!.
5!. Transfer shrimp to serving platter, drizzle sauce from pan on top and serve!.Www@FoodAQ@Com
