ooh I love a really good tomato salad!.
judge quantities by eye depending on how many mouths,
sliced tomatoes (really nice ripe ones with plenty of flavour, also different colours can really make it look pretty)
very thinly sliced rings or red onion
finely sliced garlic
balsamic vinegar
olive oil
salt and pepper
combine all of these ingredients and allow to rest in the fridge for a couple of hours (half an hour will do it, but the longer the better), to bring out the flavours!.
then, before serving add some sprigs of fresh marjoram, oregano or basil (must be fresh, dried will do nothing for this salad)
if you like you can add feta or mozzarella
reeeaaally full of flavour, works really well as a side dish or as a starter!.Www@FoodAQ@Com
