Spinach, Peaches and Pecan Salad
INGREDIENTS
3/4 cup pecans
2 ripe peaches
4 cups baby spinach, rinsed and dried
1/4 cup poppyseed salad dressing
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Arrange pecans on a single layer on a baking sheet and roast in preheated oven for 7-10 minutes, until they just begin to darken!. Remove from oven and set aside!.
Peel peaches (if desired) and slice into bite-sized segments!. Combine peaches, spinach and pecans in a large bowl!. Toss with dressing until evenly coated, adding a little additional dressing, if necessary!.

Peach-a-Berry Pie:
INGREDIENTS
4 cups fresh peaches - peeled, pitted and sliced
1 cup fresh raspberries
3/4 cup white sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
2 (9 inch) pie crusts
2 tablespoons butter, softened and cut into pieces
1 tablespoon coarse granulated sugar
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C)!.
Place peaches and berries in a colander for about 15 minutes to drain any excess fluid , then transfer to a large bowl!. Gently toss with sugar, flour, and cinnamon!. Transfer to a pie crust!. Dot with butter, and top with remaining crust!. Cut vents in top crust, and sprinkle with coarse sugar!.
Bake 45 minutes in the preheated oven, until crust is golden brown!.

8 fresh peaches - peeled, pitted and sliced into thin wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water
MIX TOGETHER:
3 tablespoons white sugar
1 teaspoon ground cinnamon
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C)!.
In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch!. Toss to coat evenly, and pour into a 2 quart baking dish!. Bake in preheated oven for 10 minutes!.
Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt!. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal!. Stir in water until just combined!.
Remove peaches from oven, and drop spoonfuls of topping over them!. Sprinkle entire cobbler with the sugar and cinnamon mixture!. Bake until topping is golden, about 30 minutes!.

You can pickle them, yes, pickle them!. Sugar, vinegar, cinnamon and nutmeg!. Peel and de-stone peaches!. Cut into quarters, no smaller, in half is idea!. Place in pot big enough for the amount you want to use!. Cover with sugar and put on heat, the sugar will soon melt, then add some vinegar (not a whole lot but some) add the cinnamon stick and nutmeg and let simmer until tender but not mushy!. You just have to watch it, different peaches take different times!. This is really good with hard peaches that aren't that sweet!. Put into containers, this is not an actual pickle, like the ones you store, just put them in the fridge sealed tight!.Www@FoodAQ@Com

1 1/2 cups fresh (or frozen) peaches, if frozen dethaw
1 pie crust
2 1/2 Tbsp!. graham cracker crumbs
2 Tbsp!. sugar
1/8 tsp!. cinnamon
Directions:
Heat oven to 400 degrees!.
Using 4-inch bowl as a guide, cut 5 circles from pie crust!. Roll out slightly, then place on a baking sheet!.
Place 1/2 Tbsp!. of graham cracker crumbs in center of each crust!.
Using a plastic knife (for kids), cut thawed peaches into chunks!. In medium bowl, mix peaches with sugar and cinnamon!. Divide peaches among crusts!.
Fold edge of each crust up and over peaches to form pies!.
Bake 30 minutes until pies are golden brown!. Let cool 5 minutes before serving!.
