Proper method to rehydrate shiitake mushrooms?!
I've been using dried Shiitake for years!. However, they never taste quite right!. Using warm water and soaking and even re-soaking!. Once used in a dish I cannot seem to get the texture and flavor as one gets from even a mediocre Japanese restaurant!. I have spent good money on multiple brands with the same result!.Www@FoodAQ@Com

Try using boiling water - as if you're making a cup of tea!.
also, try using chicken broth or dashi instead of just plain water!. If they're going into a soup or something like that, they might as well be pre-seasoned, no!?

put them in a pasta strainer, over a boiling pot of water for about 5 to ten minutesWww@FoodAQ@Com
