3/4 cup sliced mushrooms
4 ounces Jarlsberg cheese, shredded
2 ounces mozzarella cheese, shredded
1 (9 inch) unbaked pie shell
Preheat oven to 425 degrees F (220 degrees C)!.
In a large bowl, whisk together eggs and half-and-half!. Season with salt, white pepper and nutmeg!. Place shredded Jarlsberg and mozzarella and mushroom slices (mushroom on the top) in the pie shell!. Pour egg mixture over cheese!. Bake in preheated oven for 15 minutes!. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set!. Allow to set 5 to 10 minutes before serving

Perfect for brunch!. This recipe makes two 9 inch quiches!.
Ingredients
10 oz!. fresh baby spinach
1 (8oz!.) container sour cream
2 pie crusts
2 tablespoons olive oil
1 small onion finely diced
12 oz!. mushrooms finely diced
2 cups finely diced ham
8 oz!. shredded Monterey Jack cheese
8 oz!. shredded cheddar cheese
8 eggs
1-1 ? cups half and half
Salt and freshly ground pepper
Directions
Preheat oven to 375°
Heat olive oil over medium-high heat and sauté onions until soft and translucent, stir in mushrooms; cook for 2 minutes or until soft; stir in ham, remove from heat!.
In a large bowl, combine spinach, sour cream, and salt and pepper to taste!. Divide in half and spread into 2 pie crusts!. Top with ham and mushroom mixture!.

1 bunch green onions, chopped
2 tbsp!. melted butter
2 c!. (8 oz!.) shredded Swiss cheese
6 slices bacon, cooked and crumbled
1 (8 oz!.) can sliced mushrooms, drained
2 c!. chicken, chopped and cooked
8 eggs, beaten
1 garlic clove, crushed
1/2 tsp!. salt
1/2 tsp!. dry mustard
Dash of ground nutmeg
Dash of white pepper
Preheat oven to 425 degrees!. Line two 9 inch quiche dishes with pastry!. Prick bottom and sides of pastry with a fork!. Bake for 6-8 minutes!. Reduce oven temperature to 350 degrees!. Cool on wire rack!. Saute onion in butter until tender!. Combine onion, cheese, bacon, mushrooms, and chicken!. Toss gently!. Spoon half of mixture into each pastry shell!. Combine remaining ingredients!. Beat well!. Pour half of this mixture into each shell!. Bake for 30-40 minutes or until set!.
Note: Unbaked quiche can be frozen if you cover with aluminum foil!. To serve, thaw overnight in refrigerator and bake at 350 degrees for 40-50 minutes!.Www@FoodAQ@Com

Swiss Cheese & Mushroom Quiche
1 10-inch pie crust (I use Martha Stewart's pate brisee for all my pie crusts!.), pressed into a pie pan or tart pan
1 tsp butter
1 1/2 cups chopped onion
1/4 lb mushrooms, sliced or minced
1/2 tsp salt
black pepper
pinch of thyme
1/2 tsp dry mustard
4 large eggs
1 1/2 cups milk
2 tbs!. flour
1 1/2 cups (packed) grated swiss cheese
paprika
(variations: try other cheese, use fresh tomato slices or fresh herbs in place of mushrooms or in addition to them!.)
Preheat oven to 375!.
Melt butter in small pan, Add onions, saute over medium heat, when they have started to soften, add mushrooms, salt, pepper, thyme, mustard!. Saute about 5 minutes more and remove from heat!.
Combine eggs, milk, flour in blender or food processor, beat well!.
Spread grated cheese over bottom of crust, spread onion, mushroom mixture on top!. pour in custard and sprinkle top with paprika!.
