Are there any suggestions for easy, quick dishes that will feed 6-8 people?!

I am part of the group of about 30 people hosting about 60 people, and we need to feed the whole 90-100 one night!. I was after any ideas (they don't need to be recipe's just suggestions of dishes that I can find online) of large pot luck dinner type dishes that have wide appeal (as the group will cover all ages)!.The ideal dishes would be soups, casseroles, pasta's and rice dishes!. I'm going to be cooking about 2-3 dishes all up and need something easy!.

QUICK PAN NACHOS
1 large can refried beans
1 lb hamburger
1 package taco seasoning
3-4 cups grated cheddar cheese
1 medium can sliced olives
1 large or 2 med chopped tomatoes
1 bunch green onions chopped
sour cream
guacamole
salsa
Brown hamburger and add taco seasoning as package instructs!. While hamburger simmers, spread the refried beans into the bottom of the baking dish and place in the oven under the broiler until beans are hot all the way through!.
Top beans with hamburger mixture and then spread cheese evenly over the top!.
Place back under the broiler until cheese is melted!. Top with green onions, tomatoes and olives!.
Cut into wedges and spoon onto a plate, top with sour cream, guacamole and salsa then surround with corn chips!.
Scoop up with the chips and enjoy!
SKILLET TORTILLA PIZZA
This is a quick, tasty snack for when you're in a hurry and don't have the time for take-out!
1 tortilla
1/3 cup cheese (any kind)
1/4 cup tomato sauce
1 teaspoon olive oil
1/4 teaspoon each basil and oregano
olive oil spray
salt, pepper
garlic powder
hot salt or cayenne pepper (optional)
Heat a small amount of olive oil in a skillet on high!.
Spray a tortilla with olive oil on both sides!.
Season the top with salt, pepper, garlic powder and hot salt or cayenne pepper, if desired!.
Mozzarella cheese is nice, but American, Cheddar, Provolone, Scamorza and Muenster cheeses also work well!. This is a good way to use up cheese ends often available at the deli!. Cut the cheese into 1/2" X 1/4" chunks!. Have your ingredients ready for quick assembly on the hot pan as it continues to heat up!.
When the pan begins to get hot, place the seasoned tortilla in the center of the skillet!. Mound the cheese in the center of the tortilla, leaving a 1" margin around the edge of the circle!. Allow a few minutes to go by, (don't walk away!) and as the cheese is partially melted and the skillet is becoming quite hot, pour the sauce over the cheese!. Reduce heat at this point if needed, but the goal is for the tortilla to become golden brown and crispy!.
Sprinkle the remaining seasonings over the sauce and drizzle with a few random drops of olive oil!.
When the sauce is heated and the tortilla is golden brown underneath, use a large spatula to carefully transfer it to a dish!.
Season with salt, pepper, and hot salt to taste (if desired) and roll up or cut into 4 triangle wedges or two halves for serving!.
Each tortilla pizza makes one serving!.
Simple, made with ingredients usually on hand, faster than thawing those tasteless frozen pizzas and so good!
Note: If you have flatbread or pita bread on hand, these can also be used for the crust!. Spray with olive oil and proceed as above!. Split pita bread by cutting along the side to make two circles!. Place the crust part down!. Pita will need a longer cooking time because of the added thickness, or simply place the pre-assembled pizza under the broiler instead!.

2 lg!. jars of mushrooms, drained

1 pt!. whipping cream
Cut chicken into cubes!. Mix first 5 ingredients in large pan, boil covered until chicken is done!. Add 1 1/2 cups minute rice and whipping cream!. Simmer, uncovered!. After rice is moist!. May need to add 1 tablespoon flour to chicken!. Serve on toast and sprinkle with parsley flakes!.
QUICK AND EASY MEXICAN DISH
1 lb!. ground beef
1 med!. chopped onion
1 can Ranch style beans
1 can Ranch style Spanish Rice
1 pkg!. Doritos
Brown ground beef and onion together in skillet!. Mix browned beef, Ranch style beans, Ranch style Spanish Rice together!.
Put a layer of Doritos in 9x13 inch pan!. Pour meat, bean and rice mixture over the Doritos!. Grate cheese and put on top!. Bake in 350 degree oven for about 15 or 20 minutes!.
LASAGNE HOT DISH - QUICK
In a well greased 9 x 13 inch pan put 1/2 package wide egg noodles (uncooked)!.
In large bowl combine the following:
1 lb!. raw LEAN ground beef, torn in sm!. pieces
1 tbsp!. instant diced onion
1 lg!. jar Prego sauce with mushrooms

Microwave Directions: In 3 quart microwave-safe casserole combine flour, sugar, salt, thyme and cayenne pepper!. Stir in chili sauce and tomatoes; blend well!. Arrange turkey pieces in casserole!. Cut beef into thin strips!. Cook beef and onion in butter until meat is lightly browned!. Stir in water, mushrooms with liquid, gravy mix and paprika!. Simmer for 5 minutes, stirring occasionally!. Add sour cream, heat but do not boil!. Serve over rice or noodles!. Serves approximately 4-5 people!.

This is a great way to please the kids!. Optional ingredients listed are those which small children often reject!. Use the larger jelly roll pan for a thinner crust pizza if you wish!. For one 14 inch round pizza you will need:
1 lb!. extra lean ground beef
1 tsp!. salt
1 tsp!. dried Italian herbs, optional (dried oregano, marjoram, savory, basil or sage leaves)
1/2 tsp!. fennel seeds, optional
1/4 tsp!. cayenne pepper, optional
2 pkg!. active dry yeast
1 c!. warm water (105-115 degrees)
1 tsp!. sugar
2 tbsp!. salad oil
1 tsp!. salt
2-2 1/2 c!. all-purpose flour
1 can (8 oz!.) tomato sauce
2 sm!. onions, sliced
1 green or red pepper, sliced, optional
1/2 c!. grated Parmesan cheese
2 c!. shredded mozzarella cheese
1!. Crumble beef into skillet!. Add salt, herbs, seeds and cayenne pepper if used!. Stir and cook until meat loses pinkness!.

Tips: To prepare pizza ahead, cook beef and shred and slice ingredients!. Crust can be prepared ahead also but it will rise!. Punch down to use!.
Good served with: Leafy green salad and fresh fruit!.

1 pkg!. taco seasoning

In a large skillet brown the beef and drain!. Add can of beans, taco seasoning, water; simmer 5 minutes!. Add cheese and mix well!. Add chips and lettuce; stir well and serve!.
ROAST EYE OF ROUND
2 to 4 lbs!. eye roast
1 lg!. onion
1 env!. "Au Jus" gravy mix
1/4 c!. dry vermouth mixed with 1/4 c!. water
1 roasting bag
Combine gravy mix and vermouth and pour over roast after inserting into roasting bag!. Slice onions and place on top of roast!. Seal bag and pierce for air vents according to package directions, using shallow 2 inch deep roasting pan!. Bake at 325 degrees for 1 1/2 hours!. Test for doneness before removing from bag!. If tender, remove according to directions!. Make gravy if desired!.
RUSH HOUR VEGETABLE SOUP
1 can (15 oz!.) macaroni and beef in tomato sauce
1 can (14 1/2 to 15 oz!.) stewed tomatoes
1 jar (12 oz!.) Heinz HomeStyle Au Jus Gravy
1 pkg!. (10 oz!.) frozen mixed vegetables
1 c!. water
1 tbsp!. minced fresh onion
1/2 tsp!. chili powder
Combine ingredients in 3 quart saucepan!. Bring mixture to a boil, then simmer 10 to 15 minutes or until vegetables are tender; stir occasionally!. Makes 6 servings (about 6 cups)!.
COMPANY'S DINNER

3/4 c!. water
1 can Campbell cream of mushroom soup
4 lb!. roast beef (sirloin or tip)
Put rice in bottom of a casserole dish!. Put a cake rack or meat rack over dish so that roast beef sits on top of dish!. The drippings of roast beef drip into the rice during cooking!. Place in 350 degree oven and cook to your likeness (rare, medium, or well-done)!. Once during the cooking time, remove the rack with meat on it and stir the rice so it won't stickWww@FoodAQ@Com

All I can think of to feed a big group is chili!. You can make it in about an hour, less than that if you make it meatless and used canned tomatoes and beans!.Www@FoodAQ@Com

Some recipes I've used for reunions and parties!.!.!.can be doubled or tripled !.!.!.etc!.:
HASH BROWN CASSEROLE
2 lbs!. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red – green – yellow – orange – or a mixture of all)
1 lb!. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 – 8oz!. packages of shredded cheese
? cup milk
12 eggs beaten
Tabasco (optional)
sour cream & salsa (optional)
Grease a 9 x 13 baking pan, wipe excess with paper towel!.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoes…then
Peppers…
Mushrooms…
Ham!.!.
Onions (reserve about ? cup)
Mix eggs & milk together……!.I added about 2 TBLS!. Tabasco…more to your taste… pour slowly over all!.
Cover with shredded cheese…!.then sprinkle over all
Remaining onions…
Olives…
Bacon…
Cover and refrigerate overnight!.
Uncover and bake at 375 degrees for 35 – 45 minutes…until browned and cheese is melted!.
Serve with sour cream and/or salsa!.
OLD SETTLER’S BEANS
INGREDIENTS:
1/2 lb!. ground beef1/2 lb!. bacon
1 chopped onion
Brown in skillet and drain excess grease!.
ADD:
16 oz!. can Red Kidney Beans (drained)
24 oz!. can Pork & Beans (drained)
1/2 cup white sugar
1/2 cup dark brown sugar
1/4 cup Catsup
2 TBLS!. Molasses
1/2 tsp!. dry mustard
Mix Thoroughly !
Cook in a crock pot until!.!.!.hot!.!.!.hot!.!.!.hot!
MARINATED VEGGIE SALAD
1 lb!. can French style green beans
1 lb!. can small peas
1 lb!. can white corn
1 - 4oz!. jar pimento (chopped)
1 cup shopped onion
1 cup chopped celery
1 cup chopped green pepper
1 cup sugar (I used artificial sweetener)
2/3 cup vinegar (I used red wine vinegar)
1/2 cup cooking oil
1 tsp!. salt
1 tsp!. pepper
1!.)Pour green beans, peas, corn & pimento in a colander to drain over a
large bowl!. Discard 1 1/2 cups of liquid!.
2!.)Put veggies in a large bowl and fold in onions, celery and green
peppers!.
3!.)Mix together thoroughly the remaining ingredients and toss with
veggies!.
4!.)Cover and let sit over night in refrigerator!. (The longer it marinates the better!.)
"Corny Beanie Weenies!."

Mix one can of good baked beans
We use a good sized can of beans (14-16 ounces, I think) and
get a kind that we like (maybe with brown sugar, onion, and bacon)!.
There are several kinds of good baked beans!.
and a package of Oscar Meier Weiners (all sliced up)!.
with a can of whole kernel corn (drained)
Any way, heat up these three ingredients, and serve with brown bread
(maybe toasted !?) and a glass of milk!.
It doesn't get any easier than this, and is suprisingly good!

1!.)Might put ingredients in a casserole dish and top with corn muffin mix!.
2!.)Substitute a pound of cooked ground beef/gr!.turkey……rename to…!?!?

1/4 cup honey
sugar to taste
Serve with chip, crackers or veggies!.
BLACK OLIVE DIP
MIX THOROUGHLY:
1 small can chopped black olives
3oz!. cream cheese softened
Mix with enough Mayonnaise to desired consistency!.
Worcestershire sauce (optional)!.
Tabasco hot sauce, to taste!.
7-LAYER DIP
INGREDIENTS:
2 cans refried beans
1 small container salsa
1 bag shredded lettuce
24oz!. container sour cream
1 bunch of green onions, chopped
1 small canned sliced black olives
1 package shredded cheese
DIRECTIONS:
1!.) In a 9 x 13 pan, spread refried beans!.
2!.) Cover with salsa!.
3!.) Spread lettuce over salsa!.
4!.) Cover lettuce with sour cream (put heaping spoonfuls randomly on top of lettuce & carefully spread)!.
5!.) Sprinkle cheese on top of lettuce!.
6!.) Sprinkle onions over cheese
7!.) Top off with olives!.
Hint:
Add some Tabasco to refried beans, mix thoroughly!.
Sprinkle 1/2 cup real bacon bits on top!.

MIX TOGETHER THOROUGHLY:
1 (10 3/4oz!.) can Cream of Chicken Soup
1/2 cup sour cream
3/4 cup salsa
2 cups colby/jack shredded cheese
Hint:
Can be served cold or warm!.
Can be doubled, tripled!.!.!.!.etc!.
Excellent for a large crowd
DIRT PUDDING
INGREDIENTS:
1 pound bag of Oreo’s
1 large box of instant vanilla pudding
1 small container of Cool Whip
1 Tablespoon powdered sugar
INSTRUCTIONS:
1!.) Crush 3/4 bag of Oreo’s and spread in 9 x 13 baking dish!.
2!.) Make pudding as directed on package!.
3!.) Add Cool Whip & sugar, spread over crushed Oreo’s!.
4!.) Crush remaining Oreo’s and sprinkle on top of pudding mixture!. Refrigerate!.
Banana Pudding
I usually double the recipe!.!.!.!.never any left-overs!.
Ingredients:
Bananas
Use instant Banana pudding or vanilla pudding fix by directions on box!.
Cool Whip!.!.!.add to pudding mix thoroughly!.
Vanilla wafers
Toasted coconut!.
Line serving dish with a layer of vanilla wafers (a row up the sides of dish, also!.)
Add a layer of sliced of bananas
Gently cover with a layer of 1/2 pudding mixture!.
Make a second layer of wafers, bananas & pudding!.
Top with some toasted coconut and/or crushed vanilla wafers!.
