I make a lot of homemade soups!. If you use all fresh vegetables you hardly need to add any salt or seasoning at all!. One of my faves is Veggie Chili:

Corn
Black Beans
Kidney Beans
1 Jar of Paul Newmans Salsa (Whichever temp you like)
Diced white onion
Diced tomato
Any other veggies you like
Add water to the consistency you like

Simmer on the stove or cook in a crockpot for several hours!. It makes a lot, so you can share or save it for several meals!. If you add whole grain bread (I buy loaves from Panera) You get all your veggies and fiber!. You feel full, but you've filled yourself with veggies, water, and fiber!.Www@FoodAQ@Com

Here's one!. It makes a lot, so I freeze a few portions for quick meals later!.

RED LENTIL SOUP

2 cups dried red lentils
2 quarts stock (chicken, vegetable, or water)!. I prefer homemade chicken stock, but you'll need to salt to taste!. If you use store bought I suggest the lower sodium, it has plenty of salt!.
2 cups (or more) Chopped kale
2 carrots
1 large onion
4 cloves garlic (less if you prefer)
? cup orzo
1 yellow squash (optional)
2-5 Tbsp Olive oil
1 tsp red pepper
2 Tbsp curry powder
salt and black pepper to taste

Cover the red lentils in water to soak as you chop the vegetables!. It cuts down on cooking time!.

To chop the kale, run a knife along both sides of the pale center spine, removing it from the green leafy part!. Wash and dry the green leaves!. Hold a large bunch of leaves together and finely chop the kale!. You want small pieces that will fit onto your soup spoon, instead of hanging down like seaweed!.

Finely chop the onion and carrots!. Sauté the garlic, spices, onions, carrots, and kale in a large soup kettle until the onions start to soften and the kale is brighter!. If the vegetables stick add a bit more oil!.

Pour the water off the soaking lentils and add them to the vegetables!. Add the stock!.
Bring to a boil, then reduce heat, simmering for 40 minutes to an hour!. Stir occasionally so the soup doesn't stick to the bottom of the pan!. The red lentils will loose their bright color, and soften into mush!. If the mush becomes too thick, add a little water!. Add the orzo and finely chopped yellow squash 10 minutes before eating!. If freezing, omit the orzo!.

Serves 8-10!? It's low fat, high fiber and protein!.Www@FoodAQ@Com

omg these are soooo good!!! Black Bean Veggie Burgers
and SUPER healthy!!!
1 (16 ounce) can black beans, drained and rinsed
1/2 green bell pepper, cut into 2 inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
1 egg
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs

DIRECTIONS
If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil!. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet!.
In a medium bowl, mash black beans with a fork until thick and pasty!.
In a food processor, finely chop bell pepper, onion, and garlic!. Then stir into mashed beans!.
In a small bowl, stir together egg, chili powder, cumin, and chili sauce!.
Stir the egg mixture into the mashed beans!. Mix in bread crumbs until the mixture is sticky and holds together!. Divide mixture into four patties!.
If grilling, place patties on foil, and grill about 8 minutes on each side!. If baking, place patties on baking sheet, and bake about 10 minutes on each side!.

I like grilled fish but that doesn't sound very hearty!. Sometimes I'll do a baked chicken!. You just use some cooking spray in the pan, add chicken, some slices of onion & tomato, bellpepper, a drizzle of olive oil, salt & pepper!. I bake it around 350 for about an hour & I eat that with some brown rice!.Www@FoodAQ@Com

Chili!.!.!.but watch the fat!. Drain the beef or turkey when you cook it!. Do not have cornbread or any carbs besides maybe a slice of wholegrain bread with it!. Have a salad with it too and watch your portions!.Www@FoodAQ@Com

A hearty stew with chicken broth, lean eat chunks and veggitables!. Or a home-made pie like chicken or beef with chopped carots or something!.Www@FoodAQ@Com
