Use a glass or metal bowl!. You want to make sure there's not a spec of residual grease or oil from something - that's why you don't use plastic - it will keep the whites from fluffing!. If you want to do it the hard way, you can use a manual egg whip and whip them until they just hold a soft shape!. OR the easy way is to take your electric mixer and if it has a wire whip, use that, or if not, just use the regular beaters and whip the whites until they hold a soft shape when you remove the beaters!.Www@FoodAQ@Com

A metal bowl is fine!. I use a hand mixer but it can be done by a light weight whisk!.
