What is a good meat pie recipe?!
My cousin and I just watched Sweeney Todd, so we want to make meat pies for dinner tonight! I have never even seen a meat pie before though, so I need a recipe that tastes good (of course) and thoroughly explains how to make them :)Www@FoodAQ@Com

Ingredients:
Filling:

Stir until boiling, reduce heat, cover and simmer gently for 20 minutes, remove from heat!.
Combine extra water and flour, stir till smooth, add the flour mixture to the meat, stir till combined, return to heat, stir till meat boils and thickens, add soy sauce, mix thoroughly!. simmer uncovered for 5-10 minutes, remove from heat and allow to cool!.
To make the base
Sift the flour and salt together in a bowl!.
Place water and dripping in a saucepan, stir till dripping melts, remove from heat!.
Make a well in the centre of dry ingredients, add the liquid, stir till combined!.
Turn out on a lightly floured board, knead lightly!. Roll out pastry to line 8 greased pie tins (around the same size tin as a pot pie comes in) cut off excess pastry from the sides of the tins, fill the base with cold meat filling!.

Make up puff pastry (according to directions on packet), roll out on a lightly floured board, cut into rounds for top of pies (use a saucer as a guide for size) wet edges of base pastry and gently press tops into place, trim edges with a sharp knife!. Brush tops with combined egg yolk and water!.

Either with herbs (wild and cultivated) and cheese or with meat chicken, ground beef, port etc!. Something like a Greek version of pizza!. This is an excellent meat pie and can be a main dish or a side dish!.!.!.!. More

* ? kilo ground beef
* 2 medium size shallots chopped in slices
* 3 spring onions
* ? bunch of dill finely chopped
* Salt and pepper
* Olive oil
* ? cup graviera cheese (see note below)
Directions
1!. Boil shallots until tender, then we strain them!. Sauté the onion, add shallots and the ground meat, Add salt and pepper and the dill!. Let it cool down!.
2!. We prepare the phyllo for meat pies (see separate recipe) and place the first one (should cover sides of pan as well) on an oiled baking pan!. Add the meat mixture and sprinkle with the cheese!. Put the second phyllo on top!. Take both phyllos and try to join them by pressing and giving them a nice shape!. Carve with knife (superficially) in 8 pieces and oil the top dough!. Preheat oven and bake at 180ο until a golden colour is achieved!.
3!. Note: Of all Greek cheeses other than feta, graviera is probably the easiest to find outside Greece!. It is sold in wheels (or wedges from wheels) at large grocery stores, Greek and ethnic grocers, and specialty cheese shops!. It can also be found online!.
4!. Substitutes for Graviera is Gruyere cheese but if it is difficult to find try any other hard cheese which do not melt such as halloumi (Cypriot cheese)!.

SHEPHERD'S PIE
1 lb beef / lamb / veal and pork (mixed)
5 oz chopped onion
3 tablespoons butter or oil
3 cloves garlic, minced
1 1/4 cup stock / gravy / meat jelly
1 teaspoon flour or cornstarch
tomato paste
1 tablespoon Worcestershire sauce, or
1 1/2 teaspoons wine vinegar
thyme, salt, pepper, cayenne
2 lb potatoes
1 cup milk (about)
3 oz butter
1 tablespoon grated dry cheddar
1 tablespoon grated Parmesan
Chop, process or mince the meat!. Cook onion in the fat until soft!. Add the meat and garlic, stirring well; then raise the heat so that the meat browns!.
Turn it over in large sections with a spatula, so that it browns all over!. Pour off any surplus fat!.
Add some of the liquid and bubble gently for 5 minutes!. Sprinkle on flour or cornstarch, stir again and add the remaining liquid!.
Let it bubble to a rich sauce, adding the various flavorings to taste!.
Meanwhile scrub, boil and peel the potatoes!.
Set aside a couple and slice them thinly!. Mash the rest with the milk and butter, seasoning to taste!. Put the meat into a shallow dish!.
Spread the mashed potato on top and, with the slices, make a ring around the edge!. Scatter the cheese over, and brown under the broiler at a moderate heat, or at the top of a hot oven!.

1 bell pepper, chopped
1 celery stalk, chopped
2 cups onion, chopped
1 jalapeno pepper, chopped
1 seven-ounce can mushroom “pieces”
1 ten-ounce can rotel diced tomatoes with chilies
1 teaspoon Tony Chachere’s “More Spice”
1 tablespoon cajun shake
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 tablespoons Worcestershire sauce
2 tablespoons olive oil
1 and ? pounds ground meat
1 cup uncooked rice
2 ready-made piecrusts
2 ready-made roll out piecrusts
In a skillet, sauté the bell pepper, celery, onion and Jalapeno in the olive oil for about fifteen minutes!. Then add the meat and cook until the meat is browned!.
Drain the juice from the meat!. Drain the juice from the tomatoes and mushrooms!. Add the tomatoes, mushrooms, and spices to the meat and cook for about five minutes!.
In a different pan cook the rice, as you would usually do, then add the rice to the mixture and stir in well!. Place mixture in a ready-made piecrust and cover with ready-made roll out piecrust!. Pinch to seal edges!.
Bake in preheated oven at 380°F approximately 40 minutes, until brown!. Makes 2 pies!.
Options: Adjust spices according to your taste!. Instant rice can be substituted, if desired!.

3 eggs, beaten
1 c!. graham crackers or cooked grits
