i have been eating so many avocados recently!.!.i love them!. but am a bit lost what to do with them other than salads and i personally like it sliced up on toast in the morning!.!.!.

My favorite avocado breakfast recipe!.!.!.!.These are very quick meals!.
1!. Lightly butter a flour tortilla!. Slice half avocado, salt/pepper and Monterrey jack cheese or provolone cheese on top of buttered tortilla!. Broil until cheese melts!. Fold in half to eat!. I use Tabasco!.
2!. Lunch or brunch!.!.!.Make quacamole!. Stuff into heated crispy taco shells!. Add shredded jack cheese and alfalfa sprouts!. I use Tabasco!.
3!. Lunch or dinner!. Very filling! Thickly slice 2 pieces of wheat bread from bakery!. Butter, and place on a cookie sheet next to each other!. On one half cut up a whole avocado!. Sprinkle heavily with the seasoning called "SPIKE" (Red label says "you'll like Spike"-original flavor)!. On the other side pile sliced fresh mushrooms into a mound!. Heat in the broiler for a minute or two until that is heated but not too toasted!. Pull it back out and put sliced jack or provolone cheese on top of mushroom side!. Finish broiling until cheese melts!. Using a spatula, fold sandwich together (you only get one try, lol)!. Cut in half with steak knife!. It is a huge sandwich!. You may need a fork at first!. *Easy Egg and Avocado Breakfast Burrito
6 eggs
1/3 cup milk
1/4 cup shredded Cheddar cheese
salt to taste
2 avocados - peeled, pitted, and mashed
4 (10 inch) flour tortillas, warmed
2/3 cup dry curd cottage cheese
1/4 cup ketchup
In a bowl, beat together the eggs, milk, and cheese!. Season with salt!. Pour into a skillet over medium heat!. Cook and stir until scrambled!.Season mashed avocados with salt!. Place tortillas one at a time in a separate skillet over medium heat, and cook just until warm!. Spread equal amounts of the avocado mixture on one side of each warmed tortilla!. Layer with equal amounts cottage cheese and scrambled eggs!. Roll into burritos and serve with ketchup!.
*Fresh avocado with poached eggs!.

1 avocado, quartered

2 ripe avocados, room temperature

10 oz!. smoked salmon slices
1/2 avocado
1 tablespoon lemon juice
16 medium cooked shrimp, shelled and deveined

Cut the salmon slices into 2 X 1 1/4 inch rectangles!. Remove the pit from the avocado half, cut in two and remove the skin!. Then cut each quarter into four or five slices lengthwise and cut the slices in half through the middle!. Place the pieces in a bowl and toss in the lemon juice!.

-For the Salsa:

1/2 cup fresh lime juice!.

1 recipe pastry for a 9 inch single crust pie!.
Combine sweetened condensed milk, lime zest,
lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens!. Stir in avocado pulp!. Pour filling into pie shell!.Chill pie for several hours!. Garnish with whipped cream, and serve!.

1 clove garlic, crushed!.

3!. Poached eggs aren’t as time consuming as you may think!. And they go great with an avocado:
2 eggs
water
1 tsp salt
1 avocado
juice of half lemon
ground pepper to taste
Fill up a medium pot with water and salt!. Bring water to a vigorous boil!. Crack the two eggs into two separate teacups!. Place eggs in boiling water!. Turn down heat to medium for six minutes!. Meanwhile peel and slice avocado!. Squeeze fresh lemon juice over the avocados!.
Scoop out the eggs, garnish with avocado and serve hot!.
