i have been eating so many avocados recently!.!.i love them!. but am a bit lost what to do with them other than salads and i personally like it sliced up on toast in the morning!.!.!.

what other recipes are there for avocado!?particulary for breakfast!?!?!?

My favorite avocado breakfast recipe!.!.!.!.These are very quick meals!.

1!. Lightly butter a flour tortilla!. Slice half avocado, salt/pepper and Monterrey jack cheese or provolone cheese on top of buttered tortilla!. Broil until cheese melts!. Fold in half to eat!. I use Tabasco!.
2!. Lunch or brunch!.!.!.Make quacamole!. Stuff into heated crispy taco shells!. Add shredded jack cheese and alfalfa sprouts!. I use Tabasco!.
3!. Lunch or dinner!. Very filling! Thickly slice 2 pieces of wheat bread from bakery!. Butter, and place on a cookie sheet next to each other!. On one half cut up a whole avocado!. Sprinkle heavily with the seasoning called "SPIKE" (Red label says "you'll like Spike"-original flavor)!. On the other side pile sliced fresh mushrooms into a mound!. Heat in the broiler for a minute or two until that is heated but not too toasted!. Pull it back out and put sliced jack or provolone cheese on top of mushroom side!. Finish broiling until cheese melts!. Using a spatula, fold sandwich together (you only get one try, lol)!. Cut in half with steak knife!. It is a huge sandwich!. You may need a fork at first!. Stand by the broiler while cooking this!. It is very easy to burn if you aren't watching!.
Spike is an amazing spice that I found many years ago and is great on avocado and tomatoes!. It changes the flavor into more 'health food" dishes rather than Mexican foods flavor!.Www@FoodAQ@Com

*Easy Egg and Avocado Breakfast Burrito
6 eggs
1/3 cup milk
1/4 cup shredded Cheddar cheese
salt to taste
2 avocados - peeled, pitted, and mashed
4 (10 inch) flour tortillas, warmed
2/3 cup dry curd cottage cheese
1/4 cup ketchup

In a bowl, beat together the eggs, milk, and cheese!. Season with salt!. Pour into a skillet over medium heat!. Cook and stir until scrambled!.Season mashed avocados with salt!. Place tortillas one at a time in a separate skillet over medium heat, and cook just until warm!. Spread equal amounts of the avocado mixture on one side of each warmed tortilla!. Layer with equal amounts cottage cheese and scrambled eggs!. Roll into burritos and serve with ketchup!.

*Fresh avocado with poached eggs!.
2 eggs
water
1 tsp salt
1 avocado
juice of half lemon
ground pepper to taste

Fill up a medium pot with water and salt!. Bring water to a vigorous boil!. Crack the two eggs into two separate teacups!. Place eggs in boiling water!. Turn down heat to medium for six minutes!. Meanwhile peel and slice avocado!. Squeeze fresh lemon juice over the avocados!.Scoop out the eggs, garnish with avocado and serve hot!.

*Avocado Toast With Lemon
1 avocado, quartered
4 slices bread, toasted medium well
1 lemon, quartered
salt, to taste
pepper, to taste

Mash the avocado and spread it evenly on the toast pieces!.Squirt the lemon juice over the avocado!. ( Optional: Peel and place the lemon in pieces on top, after the squeeze!. I started this when I was a kid and still love it this way!. Very lemony! )!.Salt and pepper!. Eat immediately before it gets soggy!.

*Avocado with english muffins
2 ripe avocados, room temperature
sea salt
cracked pepper
1 large tomato
2 English Muffins, halved
butter

Cut the avocados in half, remove the pit and scoop out the avocado into a small bowl and mash with a fork!. Add fresh ground sea salt and cracked fresh pepper to taste!.
Slice the tomatoes and place on a plate!.Split the English muffin halves and toast them in the toaster!. Spread lightly with butter!.To serve; place 2 buttered and toasted English muffin halves on a plate, add a slice of tomato, and top with a large spoon of mashed avocado!. Grind a bit more salt and pepper over the top if desired!. Serve with fresh fruit such as grapes or orange slices, herbal tea and muffins!.

*Salmon, Shrimp and Avocado Rolls
10 oz!. smoked salmon slices
1/2 avocado
1 tablespoon lemon juice
16 medium cooked shrimp, shelled and deveined
Lumpfish roe, to garnish
Fresh dill weed, to garnish

Cut the salmon slices into 2 X 1 1/4 inch rectangles!. Remove the pit from the avocado half, cut in two and remove the skin!. Then cut each quarter into four or five slices lengthwise and cut the slices in half through the middle!. Place the pieces in a bowl and toss in the lemon juice!.

*Bacon, Avocado, and Cheese Omelet
-For the Salsa:
2 cups finely chopped tomatoes, seeded
2 jalapeno peppers, or to taste, seeded and minced
4 tablespoons minced fresh cilantro
3 tablespoons fresh lime or lemon juice
Salt and pepper to taste
-For the Omelet:
12 large eggs
6 tablespoons water
Salt and pepper to taste
3 tablespoons Butter Flavor Crisco all-vegetable shortening or 3 tablespoons Butter Flavor Crisco stick, divided
9 slices of lean bacon, cooked and crumbled
2 small avocados, peeled and cut into 1/2 inch pieces
1 1/2 cups coarsely grated Monterey Jack cheese

-FOR THE SALSA:
Stir together, in a small bowl, tomato, onion, jalape?o, cilantro, lime juice, and salt and pepper to taste!.
-FOR THE OMELETS:
Whisk together eggs, water, and salt and pepper to taste!.Heat 1/2 tablespoon Butter Flavor Crisco in an 8-inch skillet, preferably non-stick, over moderately high heat, until the foam subsides!. Pour in 1/6 the egg mixture evenly over bottom of skillet!. Cook for 1 minute, or until it is set!.Sprinkle 1/2 the omelet with 1/6 of the bacon, 1/6 of the avocado and 1/6 of the Monterey Jack cheese; cook the omelet for 1 minute, or until it is set!.Fold omelet over the filling, transfer to a plate and keep warm!. Repeat in the same manner with the remaining Crisco egg mixture, bacon, avocado and Monterey Jack cheese!.
Serve omelets with the salsa!.
#-FOR A VARIATION:For a hungry crowd, preheat broiler, heat 1 to 1 1/2 tablespoons Butter Flavor Crisco in a 12-inch skillet!. Follow above directions using 1/2 egg mixture, cooking until almost set!. Add 1/2 of filling and finish under broiler!. Be careful not to put plastic handle under broiler (leave oven door open with handle facing out)!. Fold over and cut into wedges!. Finish with remaining ingredients!.

*Avocado Lime Pie
1 cup sieved avocado pulp!.
1 (14 ounce) can sweetened condensed milk!.
1 teaspoon grated lime zest!.
1/2 cup fresh lime juice!.
2 egg yolks!.
1 pinch salt!.
1 recipe pastry for a 9 inch single crust pie!.

Combine sweetened condensed milk, lime zest,
lime juice, lightly beaten egg yolks, and salt; blend until mixture thickens!. Stir in avocado pulp!. Pour filling into pie shell!.Chill pie for several hours!. Garnish with whipped cream, and serve!.

*Crab with Avocado
6 oz of crab meat!.
1 medium avocado!.
1 clove garlic, crushed!.
1 tablespoon of lemon juice!.
Pinch of sea salt and freshly ground black pepper, to taste!.
Pinch of paprika!.
Spring onions, for garnishing!.

Mix together the lemon juice, crushed garlic, paprika, salt and pepper!.Peel the avocado and remove the stone!.Mash the avocado flesh together with the mixture!.Gradually mix in the crab meat!.Chop the spring onions and add as a garnish!.Serve as desired!.

*Wraps
2 avocados, seeded and peeled
8 slices each prosciutto and smoked salmon
Fresh lemon or lime

Cut each avocado into 8 slices!. Diagonally wrap each with a
prosciutto or salmon slice!. Arrange wraps on serving platter,
garnish with lemon or lime and serve!.

*Bacon stuffed Avocados
8 slices crisp bacon, crumbled!.
4 medium avocados, ripe and unpeeled!.
Lemon juice!.
? cup of butter!.
? cup of brown sugar!.
? cup of white wine vinegar!.
? cup of garlic puree!.
1 tablespoon of soy sauce!.

Slice the avocados in half, then remove pits and brush with lemon juice!.Fill the avocado with bacon!.Combine all of the remaining remaining ingredients and heat to boiling to produce the sauce!.Drizzle sauce over avocados and serve as desired!.

*Vegetable Pick-Ups
2 avocados, seeded, peeled and mashed
1 package (8 ounces) cream cheese, softened
2 tablespoons butter
2 teaspoons lemon juice
4 to 6 drops hot pepper sauce
2 stalks celery, cut into 3-inch pieces
1/4 pound fresh mushrooms, stems removed
1 each green and red bell pepper, seeded and cut into thick strips
-garnishes: fresh chives, parsley sprigs, radish slices, olive slices,pecan or walnut halves!.

Blend avocados, cream cheese, butter, lemon juice and hot pepper sauce in blender or food processor until smooth!. Spoon filling into celery pieces, mushroom caps and pepper strips or use pastry tube to pipe filling onto vegetables!.Garnish each as desired and serve!.

*Safari Sandwich
2/3 cup mayonnaise
3 tablespoons chutney
12 ounces sliced ham
1 can (20 ounces) pineapple slices, drained
2 tablespoons butter
4 onion rolls, split and toasted
2 avocados, seeded, peeled and sliced
Fresh parsley sprigs, optional

Mix mayonnaise and chutney together in small bowl; set aside!.Saute ham slices and pineapple in butter until lightly browned!. Spread about 1 tablespoon chutney mixture on each cut side of onion rolls!.
-For each sandwich, place ham slice over chutney mixture; top with 3 or 4 avocado slices and pineapple slice!. Garnish with parsley and any remaining pineapple slices!.

*Crab and Avocado Melts
3 cups shredded Cheddar cheese
1 can (6 ounces) crab meant, rinsed, drained and flaked
1/3 cup finely chopped green bell pepper
6 slices bacon, cooked and crumbled
2/3 cup sour cream
1/2 cup mayonnaise
Salt and pepper to taste
2 avocados, seeded, peeled and sliced
5 English muffins, split and lightly toasted

Combine 1 cup cheese, crab meat, green pepper, bacon, sour cream,mayonnaise and salt and pepper in a large bowl!.Spoon crab mixture onto muffin halves!.Top each with avocado slices and remaining cheese!.Broil 3 to 5 minutes or just until cheese melts!.

*Avocado Salmon Sandwich
1 ripe avocado
juice of 1 lemon
6 hamburger buns, split
2 cans (7 3/4 oz each) sockeye salmon, or 1 large can
6 slices process type Swiss cheese
Sesame seeds

Preheat broiler to about 475F!. Peel and slice avocado and sprinkle with part of the lemon juice!.Divide avocado slices evenly over the bottoms of the hamburger buns!.Drain salmon and break into chunks!. Divide evenly over avocado slices,and sprinkle with remaining lemon juice!. Top with second halves of the buns, then with cheese slices!. Sprinkle with sesame seeds!. Broil about 8 inches from heat until cheese melts and the sandwiches are heated through!.Garnish with dill pickles!.
