RED VELVET Cake:
2 cups sugar
1/2 pound (2 sticks) butter, at room temperature
2 eggs
2 tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar
Icing:
1 (8-ounce) package cream cheese
1 stick butter, softened
1 cup melted marshmallows
1 (1-pound) box confectioners' sugar
1 cup shredded coconut
1 cup chopped pecans


Cake:
Preheat oven to 350 degrees F!.
In a mixing bowl, cream the sugar and butter, beat until light and fluffy!. Add the eggs one at a time and mix well after each addition!. Mix cocoa and food coloring together and then add to sugar mixture; mix well!. Sift together flour and salt!. Add flour mixture to the creamed mixture alternately with buttermilk!. Blend in vanilla!. In a small bowl, combine baking soda and vinegar and add to mixture!. Pour batter into 3 (8-inch) round greased and floured pans!. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean!. Remove from heat and cool completely before frosting!.

Icing:
Blend cream cheese and butter together in a mixing bowl!. Add marshmallows and sugar and blend!. Fold in coconut and nuts!. Spread between layers and on top and sides of cooled cake!.Www@FoodAQ@Com

I love red velvet cake, specially when served the old-fashioned way with a thick and sumptuous cream-cheese icing!.

Honestly, you can make red velvet cake with any favourite devil's food or dark chocolate cake recipe!. All you need to add is exactly what makes it "red" which is an entire small bottle of red food colouring (approx 2-3 tablespoons)!. This is the only difference between a normal devils food cake and a red velvet cake!.

And as I suggested above, a thick filling and coating of cream-cheese icing makes this cake sing of long ago hazy days of the beautiful south!.

It's basically chocolate cake tinted red w/ white icing!. I dont' see what all the fuss is about, really!.

But a good and simple way to make one is using a German Chocolate Cake mix, and subbing 1 bottle of red food coloring for the same amount of water!. Bake in 2 round pans, then ice w/ white or cream cheese icing when cool!.


ButterCream Cheese Icing

1 pound (4 sticks) unsalted butter at room temperature
1 1/2 pounds cream cheese at room temperature
1 pound confectioners' sugar, sifted
1 1/2 teaspoons pure vanilla extract

Combine the butter, cream cheese, sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, mixing just until smooth!.Www@FoodAQ@Com

It is NOT a chocolate cake, if that's what you're looking for:) It was invented in the 1940's, when chocolate was rationed, and contains a very small amount of cocoa powder, with red food coloring, as a substitute for chocolate cake!. It really doesn't taste much different from a yellow cake; the coloring just makes a psychological difference:) !.!.!.!.!.!.WOW! it depends, if its really moist and buttery then yes, if its more like angel food then definitely no!. I've had it both ways, both at wedding surprisingly!. I liked the rum custard moist one the best!.Www@FoodAQ@Com
