Cooking veg on the bbq?!

Question: Cooking veg on the bbq!?
I want to cook a spatchcock chicken on the bbq!. I think I'm happy enough with that, but would like to cook veg on the bbq to go with it!. How do I go about this!? I have some foil trays with slits in the bottom - sold as bbq trays!. Can I put the veg in this and put it on the bbq!? What veg should I use!? Any tips on layering the veg - which should go on the bottom for instance!. also - do I need to add any oils/butter/juices/marinades/seasoning!? Any advice would be much appreciated!. Thanks!.Www@FoodAQ@Com

Answers:
Just brush the veg lightly with oil, you don't want it dripping onto the coals and catching fire!. Put some minced garlic and chopped fresh thyme in the oil to give flavour to the veg!.

Roots and fuits like squash take longer that softer veg, so those should be started first and put at the bottom of your trays, then any bulbs like onions or fennel and on top the softest like tomatoes!.

Grilling veggies with our BBQ is a favorite at our house!.
We like red, yellow & orange peppers, green chili's, eggplant, zuchini, yellow summer squash, sweet onions & roma tomatoes!.

large peppers - cut in halfs or quarters
squash - cut in half lengthwise
green chili's jalepenos - leave whole
eggplant - cut in long thick slices
roma tomatoe- leave whole
onion - cut in quarter wedges

Use olive oil to coat all sides or spray with canola oil!. I sprinkle with lemon pepper, dill, tarragon, parsley & salt (any spice flavors that you like)!.

We grill our veggie's before the meat because it takes a bit to peel the peppers & eggplant when done and they are easy enough to heat back up in the microwave (vs meat) when you are ready to serve!. We put all the vegies together in a large casserole and mix!. I keep the jalepenos on the side as they are hot when bbq'd whole with seeds!.

Corn on the cob still in the husks are great for grilling!. As well as yellow summer squash!. I slice them lengthwise and marinate them in italian dressing along with onions and zuccini squash for about an hour or so!. Then put them on the grill and let them get char marks!. They really don't take too long, but I like them best when they have slight burn marks on the outside edges, very crispy!. No need to use the trays, just put them directly on the grill!. Or you can use aluminum foil to make packets, making sure you poke a few holes in the top for steam to escape!. Good Luck!.Www@FoodAQ@Com

i usually keep the veg in big pieces so they hold up and dont fall through the racks and i only season with olive oil salt and pepper!.
u can skewer them to if you want them bite size
i add more olive oil to them once i take them off the grill
you can make orzo or cous cous and chop up the grilled veggies and mix into the pasta to have a yummy healthy saladWww@FoodAQ@Com
