My 20yr old is a slave now to restaurant food, he seems to like my thai peanut chicken and chimichonga's but I am in a quandry to please him!? Do you have a wow! recipe for these kinda piccky fellows!?Www@FoodAQ@Com

Mine love Beef!.
I get a large brisket, buy the largest you can afford and the 'floppiest' one you can find!.
Season it with what you like!. I use a lot of Garlic and whatever else i find in the kitchen, just pack it on and rub it down!.
If you have access to an outdoor grill, throw it on a hot fire and watch it closely!. Brown the outside really well all over, on all sides!.
When it is all sealed up and brown on all sides, take it off the fire!.

If you don't have an outdoor grill, you can do this part in a pan on the stove, or under a broiler!. Just brown all the sides well!.

Then when your meat is browned on all sides!.!.

Get one of those large foil disposable turkey pans and put it brisket in it!. Then, pour enough Coca Cola => COKE (not Pepsi, or any other soda) over the meat to completely cover it in liquid!.

Cover the pan very tightly with some heavy duty aluminium foil, making sure all sides are really sealed well, so no steam escapes while cooking!.

If you have access to an outdoor smoker, you can put this out in a smoker on low heat for at least 30 minutes a pound!.

If you don't have a smoker, you can use the oven!. Cook the brisket in the coke in an oven at 325 degrees for at least 30 minutes a pound!.

Then check the meat, if you need a knife to pull the meat apart, it is not done!.!. put it back for another hour or so !.!.!.

When this is truely 'done' you won't need a knife to pull the meat apart, and if you don't tell anyone, they will Not be able to tell there is Coke in it!.

Pork Chops

Brown some sliced onions in some oil in a pan!. Toss in some pork chops!. Season the way you like!. I use a lot of garlic and some Mrs Dash!. Whatever you like is fine!.
When the pork chops are brown, add to the pan a can of Cream of Celery soup, and about half a can of milk, or water!.

Cover with a tight lid and simmer all this on low heat for at least an hour!. The meat should fall off the bones!.

Chicken Parmesan!

Chicken breasts
egg
parm cheese
good quality breadcrumbs (I season plain ones with Italian seasoning, paprika, fresh pepper, salt and a little cayenne)
spaghetti
good tomato sauce
mozzarella


Start by boiling the spaghetti, just underdone!. Crack a couple of eggs in a bowl!. Now, dredge the chicken breasts in the egg!. Dredge them in breadcrumbs!. Pan fry them until just done/nicely brown and crisp!.
In an oven proof casserole dish, or individual baking/serving dishes, pour a little olive oil to coat!. Add Spaghetti, a thick bed of it!. Place chicken breasts over pasta!. Pour pasta sauce all over, bot caoting chicken so it stays crisp!. Cover with mozzarella and bake until hot and bubbly!.
Serve with parmesan and freshly cround pepper and bread n salad!. Very filling, great for the pickiest eater!!!Www@FoodAQ@Com

My son and his friends are 17, every time his friends are here, they ask if I have "French Dip Stuff" Here's what I do:

roast beef
Swiss cheese
McCormick Au Jus mix (where the instant gravy packages are)
Large yellow onion
Grinder rolls

Slice and saute onions!. Prepare Au Jus (3 cups cold water to one package Au Jus!.!.!.heat to boiling!.) Slice the grinder rolls in half, butter the top half and sprinkle with a little garlic powder!. Place the roast beef into the hot Au Jus for a few minutes to warm the meat!. Place some roast beef on the grinder (not the side that's buttered), top with sauteed onions and a couple pieces of cheese!. Place in a hot oven till cheese is melty and garlic butter side of the bread is golden!. Pour some Au Jus in a bowl for dipping the sandwich into as you eat it!. My cousion's love these (I'm 19 and love to cook), I usually have to bring them 2 or 3 meals a month, even though they still live at home!.

French Bread Rolls

INGREDIENTS:
1 1/2 cups warm water (110
degrees F/45 degrees C)
1 tablespoon active dry yeast
2 tablespoons white sugar 2 tablespoons vegetable oil
1 teaspoon salt
4 cups bread flour

DIRECTIONS:
1!. In a large bowl, stir together warm water, yeast, and sugar!. Let stand until creamy, about 10 minutes!.
2!. To the yeast mixture, add the oil, salt, and 2 cups flour!. Stir in the remaining flour, 1/2 cup at a time, until the dough has pulled away from the sides of the bowl!. Turn out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes!. Lightly oil a large bowl, place the dough in the bowl, and turn to coat!. Cover with a damp cloth, and let rise in a warm place until doubled in volume, about 1 hour!.
3!. Deflate the dough, and turn it out onto a lightly floured surface!. Divide the dough into 16 equal pieces, and form into round balls!. Place on lightly greased baking sheets at least 2 inches apart!. Cover the rolls with a damp cloth, and let rise until doubled in volume, about 40 minutes!. Meanwhile, preheat oven to 400 degrees F (200 degrees C)!.
4!. Bake for 18 to 20 minutes in the preheated oven, or until golden brown!.

Stuffed Shells

INGREDIENTS
1 (12 ounce) package jumbo pasta shells
2 eggs, beaten
1 (32 ounce) container ricotta cheese
1 pound shredded mozzarella cheese, divided
8 ounces grated Parmesan cheese, divided
1 tablespoon dried parsley
2 teaspoons salt
1 teaspoon ground black pepper
1 (28 ounce) jar pasta sauce
8 ounces sliced fresh mushrooms

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!.
Bring a large pot of lightly salted water to a boil!. Add pasta and cook for 8 to 10 minutes or until al dente; drain!.
In a large bowl, mix eggs, ricotta, half the mozzarella, half the Parmesan, parsley, salt and pepper until well combined!. Stuff cooked shells with ricotta mixture and place in a 9x13 inch baking dish!.
In a medium bowl, stir together pasta sauce, mushrooms and reserved mozzarella and Parmesan!. Pour over stuffed shells!.
Bake in preheated oven 45 to 60 minutes, until edges are bubbly and shells are slightly set!.

Apple Pie

Crust

2 1/2 cups all-purpose flour

4 tsp!. sugar

1/4 tsp!. salt

14 Tbsp!. (1 stick & 6 Tbsp!.) cold butter, cubed

1 large egg, lightly beaten with 2 Tbsp!. cold water

Filling

2 Tbsp!. freshly squeezed lemon juice

3 lbs baking apples

2/3 cup sugar, plus more for sprinkling on top

1/4 cup unsalted butter

1/4 tsp!. cinnamon

1/2 tsp!. nutmeg

1 large egg, lightly beaten

The Crust

Make the dough by hand!. In a medium bowl, whisk together the flour, sugar, and salt!. Using your fingers, work the butter into the dry ingredients until it resembles yellow corn meal mixed with bean sized bits of butter!. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding!.) Add the egg and stir the dough together with a fork or by hand in the bowl!. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture!.

Make the dough in a food processor!. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined!. Add the butter and pulse until it resembles yellow corn meal mixed with bean size bits of butter, about 10 times!. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine!. (If the dough is very dry add up to a tablespoon more of cold water!.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand!.

Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour!.

The Filling

Put the lemon juice in a medium bowl!. Peel, halve, and core the apples!. Cut each half into 4 wedges!. Toss the apple with the lemon juice!. Add the sugar and toss to combine evenly!.

In a large skillet, melt the butter over medium-high heat!. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes!. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes!.

Strain the apples in a colander over a medium bowl to catch all the juice!. Shake the colander to get as much liquid as possible!. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes!.

In a medium bowl, toss the apples with the reduced juice and spices!. Set aside to cool completely!. (This filling can be made up to 2 days ahead and refrigerated or frozen for up to 6 months!.)

Cut the dough in half!. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide!. Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes!.

Place a rack in the lower third of the oven and preheat the oven to 375? F!.

Line the bottom of a 9-inch pie pan with one of the discs of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan!. Put the apple filling in the pan and mound it slightly in the center!. Brush the top edges of the dough with the egg!. Place the second disc of dough over the top!. Fold the top layer of dough under the edge of the bottom layer and press the edges together to form a seal!. Flute the edge as desired!. Brush the surface of the dough with egg and then sprinkle with sugar!. Pierce the top of the dough in several places to allow steam to escape while baking!. Refrigerate for at least 15 minutes!.

Bake the pie on a baking sheet until the crust is golden, about 50 minutes!.

Cinnamon Apple Muffins
1 1/2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 cup milk
1/3 cup LAND O LAKES? Butter, melted
1 egg, slightly beaten
1 cup finely chopped apple

Heat oven to 375°F!. Combine, flour, sugar, baking powder and cinnamon in medium bowl!. Add all remaining ingredients!. Stir just until flour is moistened!.

Spoon batter into greased 12-cup muffin pan!. Bake for 18 to 23 minutes or until lightly browned!. Let stand 5 minutes; remove from pan!.Www@FoodAQ@Com
