"whip until soft peaks form?"?!


Question: "whip until soft peaks form!?"!?
Im making an angel food cake and I don't understand what these "soft peaks" are when the recipe says "whip egg whites with cream of tartar and salt until soft peaks form"!? What am I looking for!? What do the "peaks" look like!?!? Please help!Www@FoodAQ@Com


Answers:
If you're using electric beaters, turn off the beaters, leaving them in the egg whites!. slowly lift them out of the batter!. If the peaks bend over a little bit, that's called soft peaks, because they stay as peaks, but they still move!. Hard peaks is where they would stay pointed straight up!.

you really need a good kitchen mixer that has a wisk attachment!.!.!.!. it is almost impossible to do it by hand, and still hard with a handheld mixer!.!.!.!.!.
