Its a really delicious cake I made it a few weeks ago for my mum!.

For dinner:
serves 4 (so is its just 2 you can half every thing!.)
Takes: 10 mins plus 25 mins cooking

4 x 125g (4 1/2oz) boneless chicken breasts, skinned
3 tbsp pesto
4 sun-dried tomatoes, drained of oil and sliced
8 thin slices Parma ham
1 tbsp olive oil

1!. First preheat the oven to 200oC/400oF/gas 6!. Next spread the chicken breasts out on a board and, with a sharp knife, make a small slit in the top of each one to create a 'pocket'!.
2!. Spread the inside of the pocket with the classic pesto and layer the sun-dried tomato slices onto each chicken breast!.
3!. Wrap each chicken breast with 2 slices of Parma ham and put them on a baking sheet!.
4!. Finally drizzle each one with oil and bake them in the oven for 20-25 mins or until the chicken is cooked through!.

1!. go to supermarket
2!. Buy some smoked haddock trimmings/ broken pieces, some ready made mashed potato and a pack of green vegetable medley, and a pint of milk!. You'll also need a little cornflour for preference, but plain flour will do!. You might like some strong cheddar cheese for a topping!.
3!. For pud get some nice quality ice cream such as Mackies, either plain or honeycomb!. You could get some condensed milk in a sqeezy bottle and some cocoa powder to make a yummy chocolate sauce
4!. When you get home, put the fish into a pan with enough milk to just completely cover it!. Heat it gently till it's cooked!. (It will separate easily into flakes, but you can leave it chunky if you want) Remove the fish with a slotted spoon or similar tool, and keep it warm while you make the sauce!. (you can now stick your mashed potato in the microwave, or start heating it in the oven)!. For the sauce put about a tablespoon of cornflour into a small bowl or a cup and mix it with enogh milk to make a smooth runny paste!. Reheat the fishy milk to just below the boil!. add some of the hot milk to the runny cornflour paste, this just makes it easier to mix into the hot milk!. Pour it into the hot milk, it should thicken immediately, if not just put it back on the heat, but keep stirring!. Stir the fish back in!. Now put the fish sauce into an ovenproof dish!. Cover it with the mashed potato!. If you like, grate 3 or 4 ounces of strong cheddar cheese over it!. Put it in the oven to melt and brown the cheese!. Meantime microwave your green vegetable medley!.

Keep that lot warm while you make your chocolate sauce!. The quantities can vary according to your taste, but all you do is put some condensed milk, say three or four tablespoons, into a pan and warm it gently till it goes runny and mix in the cocoa powder a tablespoon at a time till you like the taste!. Pour it over the ice cream!.

Both parts really easy to do!.

As long as you both like fish, that should go down really well, it does in our house! Think I'll do that tonight!Www@FoodAQ@Com
