GLAZED CORNISH HEN
Yield: 2 Servings

1 x 1 1/2 LB!. GAME HEN
3 tb APRICOT SPREAD
2 ts LIME JUICE
2 ts SOY SAUCE
1/8 ts CINNAMON

REMOVE AND DISCARD THE GIBLETS FROM THE HEN!. RINSE HEN UNDER COLD
RUNNING WATER, PAT DRY!. REMOVE SKIN, AND TRIM OFF EXCESS FAT!. SPLIT
HEN IN HALF, LENGTHWISE!. PLACE HEN, MEATY SIDE UP, ON A RACK, IN A
SHALLOW PAN!. COMBINE APRICOT SPREAD AND REMAINING INGREDIENTS IN
SMALL SAUCE PAN!. PLACE PAN, OVER LOW HEAT, AND COOK UNTIL SPREAD
MELTS!. BRUSH HEN WITH 2 TBSP OF THE MIXTURE!. BAKE FOR 30 MINUTES OR
UNTIL JUICES RUN CLEAR!. SPOON REMAINING APRICOT MIXTURE OVER THE HEN!.




Rock Cornish Game Hens With Herb And Shallot Butter

2 rock Cornish game hens
salt and freshly ground -- pepper
1 teaspoon rosemary
1 teaspoon thyme
2 tablespoons chopped parsley
1/4 pound butter
5 shallots -- (minced)





Preheat oven to 350F!. Cut each hen in half, sprinkle all over with salt and pepper, and bring to room temperature!. Melt butter in small fry pan and add shallots, rosemary and thyme!. Stir well and let bubble for about 5 minutes, then remove from heat!. Place hens in flat baking pan, skin side up, and baste with the butter sauce!. bake for 50 minutes, basting every 15 minutes!. Garnish with parsley!.





CORNISH HENS WITH GLAZED ORANGES
Yield: 1 Servings

3 Rock Cornish Hens (about 1
-1/2 lb Ea)
2 tb Butter, melted
GLAZED ORANGES
1/2 c Orange juice
1 tb Honey
1/2 ts Salt
1/4 ts Dry mustard
1/8 ts Paprika

Place hens, breast sides up, on rack in shallow roasting pan; brush
with butter!. Roast uncovered in 350 oven for 30 minutes!. Prepare
Glazed Oranges!. Mix remaining ingredients; brush half of the orange
juice mixture over hens!. Roast, uncovered, brushing with remaining
mixture, until hens are done, about 45 minutes!.




Cajun Cornish Hens

Cajun Seasoning:
1/4 teaspoon cayenne pepper
1 teaspoon seasoned salt
1 teaspoon garlic powder
4 (1 to 1 1/2 pound) Cornish hens
1 teaspoon onion powder
2 tablespoon olive oil
1 teaspoon dried thyme, crushed
1 teaspoon dried oregano, crushed
1/2 teaspoon paprika
1/2 teaspoon pepper

Preheat oven to 400 degrees F!. Blend the Rub ingredients in a small
bowl!.

Wash and dry the Cornish hens!. Brush the hens with olive oil!. Season
the hens with the Cajun Seasoning!. Place the hens in a baking pan and
let stand for about 5 minutes!. Bake hens about 45 to 60 minutes!.

Makes 4 servings!.



Cornish Hens in Honey
1 tablespoon vegetable oil
1 cup chopped onions
1/4 cup chopped parsley
1 cup raisins
1 1/2 teaspoons pepper
2 teaspoons ground cinnamon
Cloves, saffron and salt, to taste
4 (1 to 1 1/2 pound) Rock Cornish game hens
Water, as needed
1 cup honey
Parsley for garnish (optional)

Heat oil in medium skillet over medium heat!. Add onion and parsley!. Cook and stir 2 to 3 minutes or until onion is softened!. Sir in raisins and spices!. Season game hens inside and out with onion mixture!. Place game hens on rack in roasting pan!. Roast in preheated 375 degree F oven 25 minutes!.

Remove pan from oven!. Pour enough water in bottom of pan to measure 1/2 inch!. Spread honey over game hens to coat!. Return to oven; reduce heat to 350 degrees F!. Roast 15 minutes or until hens are tender and golden brown!.

Remove hens to heated serving platter and keep warm!. Adjust thickness of pan juices and correct seasoning as desired!. Generously spoon over game hens!. Garnish with parsley if desired!.Www@FoodAQ@Com

most weigh 1-1 1/2 pounds so they dont take very long to cook!.

I rub them down with butter and season well with S&P both inside and out,,,!.!.place in pre heated 450 oven!.!.!.then turn down to 350 and cook for 1 hour!.!.!.the initial high heat helps to brown and crisp the skin!.!.!.Www@FoodAQ@Com
