Can diced carrots be dehydrated using the oven method?!


Question: Can diced carrots be dehydrated using the oven method!?
I would like to be able to dehydrate the classic mirepoix veggies (onions, carrots and celery) in small dice, to be stored for use in soups and stews at times when I don't have the fresh ingredients for this basic mix available!. How small a dice of these would be successful!?

Failing that, are these particular vegetables available dried in stores!? Celery and onions I've seen, but never carrots!.

If you want the classic mire poix veggies then cut them into 1/4 inch dice and place them in a single layer on a baking sheet in a oven set to no more than 200F, lower is better!.Www@FoodAQ@Com

I have dried those veggies with no problem,just cut them up the same size you would when you make soup or stew,I have a dehydrator,but have put them on a cookie sheet single layer and dries in my oven,I did not turn the oven on because it is a gas stove and it is warm enough for doing the veggies,but if you have electric,just turn it on to 100 degrees and let them sit for a few hours then turn the oven off and leave until totally dry, may take a few days!. I love to use them in my soup!.Www@FoodAQ@Com

Chop the carrots into round thin slices, the thinner the better and faster they will dehydrate!. Spread tin foil over your oven racks and spray lightly with oil!. spread the carrots out so they are not touching and turn the oven on, but just until the light comes on, should be slightly less than 100 degrees Fahrenheit!. Now get something to hold the oven door open just a crack, this allows the moisture to escape and speeds up drying time!. check on them in three or four hours, flipping once or twice, and hopefully in 12 hours or so, they should be fully dehydrated!. Store in an airtight container or vacuum bag and they should last you quite a while!.
