Cooking oil for french fries?!
Well I bought this Presto deep fryer yesterday!. Today I ordered a very well made (expensive) potatoe cutter!. Now, what kind of cooking oil do I buy!? I bought 2 bottles of Mazola vegetable oil today because I remember 20 years ago it had a high smoke point!. I want to re-use oil as much as I can!. Any suggestions on oil!?Www@FoodAQ@Com

They make special oil that is meant for fryers, and also peanut oil or soybean oil are good!.
But vegetable oil will be absolutely fine!. You can strain it and reuse it!. Change the oil when you notice that the color has changed, or it foams, or has a strange flavor or smell!.

Peanut oil is good but the best french fries are made with fresh oil!. Therefore changing the oil as often as you can afford to is the secret!. Therefore I suggest the least expensive oil you can find that still has a relatively high smoke point!. Vegetable oil (which is really a combination of oil sources), corn oil, soybean oil, will all work!. Most companies will look at cost of oil for frying before a specific type because then you can replace it more often unless there is overwhelming quality reason to be specific!. In the case of peanut oil I don't believe the quality advantage is overwhelming!.

Any vegetable oil works well in the deep fryer!. Strain the oil once a week to get lost bits of creamated foods out!. When the oil turns dark, discard!.
I usually strain the oil into bottles and stash in the fridge between frying bouts!. That is once a month or every two months I get into the mood to fry and it would go rancid if I left it in the fryer!.
If you are using on a daily basis, you only need to strain the creamated potatoes out once a week!. Just leave the oil in the fryer until it turns darker!. But you should be adding about 2 or 3 tablespoons of oil on a weekly basis, so it won't get really burnt really fast this way!.Www@FoodAQ@Com

You can use this over and over until the oil seems to get dirty because of all the crust from the french fries comes off and they are left in the oil!.

Peanut oil is the absolute best oil for cooking french fries in!. It has a very high smoke temp and is the best flavour, its what most restaurants use that make really good fries!.Www@FoodAQ@Com
Mazola Oil is good, but the best oil to use for frying anything is Hollywood Peanut Oil!. it has a higher smoking content!. enjoy your french fries!.Www@FoodAQ@Com
