Thickening scalloped potatoe sauce?!


Question: Thickening scalloped potatoe sauce!?
I made this the other night and it was perfect, when I scaled the recipe up its now taking a little longer to cook and is still a little soupy!. Is there anything I can do!?Www@FoodAQ@Com

Leave it in the oven a little longer!. If you think this will happen again you can sieve a little flour over the layers of potato and onion in order to thicken it whilst cooking!.Www@FoodAQ@Com

You can take about 1/2 cup of the soupy liquid out and thicken it with 1 tablespoon of flour and some seasoning like 1/2 tsp chicken soup base maybe a little water to make it smooth and re-add this flour mixture back into your scalloped potatoes but stir gently to make all of the sauce thicker!. and ballanced in your dish!.Www@FoodAQ@Com

Okay I do my scalloped potatoes by eye!. I do a layer of potatoes, add a couple dallops of butter!. Then sprinkle on some flour, seasoned salt, and then cheese!. Continue until you are out of potatoes!. Top last layer as normal making sure to end up with cheese on top!. Drizzle on milk (maybe 1 1/2 cups) Then I cover and bake for aout 30 min!. Then I take the cover off and continue baking until taters are good and tender!. Let the pan set for about 10 minutes then serve!. It when you do a scoop and it is to runny then put it back in the oven for a whie longer!.

I wouldn't add flour to extra cold milk then add to the potatoes!. Although it will thicken, this is the wrong time to do it!.Www@FoodAQ@Com

take some flour or cornstarch, mix in a cup with COLD milk or water until its dissolved, mix it into your sauce and bring to a boil while whisking constantly!.
Use about one TBSP with about 1/8 cup milk, add more if still not thick enough

If you are in a real pinch sprinkle instant potato buds over the top and stir in,thickens right up, mixes right in with the potato's,works great!.Www@FoodAQ@Com
