There are as many recipes as there are cooks;-}
not authentically Mexican, but here's mine:
Thaw & brown 1/2 lb ground round beef (hamburger),
in 2 tbsp oil with 1 chopped onion, in large pot!.
Add whatever & how many peppers you like,
(red, green, sweet, hot, etc!.)
1 lg can red kidney beans,
1 lg can crushed tomatoes,
Stir in 2-4 tbsp of chili powder according to taste!.
Bring to bubbling & reduce heat to simmer!.
Serve in bowls topped with grated cheese!.Www@FoodAQ@Com

1 pound ground beef
2 cans dark red kidney beans
two stalks celery
1 small or half large onion
1/2 medium green pepper
1tbsp cumin
1-1/2 tsp cayenne pepper
1 tsp (or less) crushed red pepper flakes
2 cans diced tomatoes
1 can rotelle (any flavor I like lime and cilantro best)
Brown the meat add the onion, celery, green pepper and let that all get tender, about 5 minutes or so, add the spices, beans and tomato can contents (all 3)!. Let it simmer for a while, until the beans are hot all the way thru!. While that is heating up get your toppings ready!. Before you serve it, salt and pepper to taste!.
For toppings I use:
Cheddar cheese
green onions or raw white (or any) onion, for that matter
sour cream
cilantro
and sometimes bacon if I am having company brown it while the veggies are cooking with the beef!.Www@FoodAQ@Com

LARRY’S CHILI

2 cans Hunts Special Sauce, or two cans diced tomatoes (I haven’t been able to find Hunts Special for a long time)
1 can tomato paste
2 Lb!. Ground beef, not lean, grease is needed for cooking but will be drained off!.
1 Tablespoon olive oil
1 can Kidney beans
1 can Black beans
2 medium onions, chopped coarse, I like to use one red onion & 1 bunch green onions!.
1 cup Heinz Ketchup
1 Tablespoon Hershey powdered cocoa!. Yes, you read that correctly!!
2 Tablespoon Chili Powder!. I use pure chili powder, does not have cumin in it!. (Don’t go cheap here, buy the best you can find, makes a huge difference in the taste)
1 clove Garlic chopped fine
2 Jalapeno or Serrano peppers, remove seeds & chop fine
6-8 drops Tapatio Sauce!. (this is a hot pepper sauce WITHOUT vinegar) available in the Mexican department at the grocery!.
This ingredient is the place to “tune” the heat in the chili!. Use more or less Tapatio, NOT more or less chili powder!.

In heavy pot, brown meat with onions & peppers!. Drain well, now is the time to get rid of all the grease you can!!
Add all other ingredients, be sure you use the juice from the beans & tomatoes!. This is the salt component of the dish!. Add V8 juice to achieve the consistency desired!. Simmer for about 40 minutes!.Www@FoodAQ@Com

Nope, chili con carne is nothing like that dip!. It's a spicy stew with Mexican-style seasonings!. There are lots of different regional styles!.Www@FoodAQ@Com
