In my opinion they are best eaten raw or used as a garnish with soups, Mexican foods, potatoes etc!. But, if you must cook them then try this grilled recipe!.
Grilled Green Onions
18 large green onions
1/2 cup olive oil
2 cloves garlic, minced
1/4 teaspoon freshly ground peppercorns
Salt to taste
Trim onions, removing roots, leaving about 2 inches of green top!.
Combine olive oil, garlic, pepper, and salt!. Add onions; stir to coat onions evenly!. Cover dish and refrigerate at least 1 hour!.
When ready to use, preheat grill and remove onion from refrigerator, drain and discard marinade!. Cook, turning often, 4 to 6 minutes or until lightly browned on all sides!. Remove from grill and let cool to room temperature (these hold well while our grill your steaks or other meat)!.
If you are using small green onions, bundle several together or cook them on a piece of aluminum foil!.Www@FoodAQ@Com

You may be working with green onions in which case you can chop up and use the whole thing!.
However if your " green onion"is an inch thick or so, you are dealing with leeks!.
If you have leeks cut the green part off and discard, (you only use the white part) then cut the white part in half, and rinse each half under running water to remove any soil that may have gotten between the layers!.
Then you can slice them thinly and saute them!.
Leeks are almost always cooked, and green onions can be used cooked or raw!.
Good luckWww@FoodAQ@Com

green onions are great! I eat them raw in salads and on potatoes!.
The best part of green onions is you can eat the whole thing!. The white part is small but it has the strongest onion taste, but the green is a colorful addition to your food and is tasty!. I say use the whole thing!. Green onions are more mild than white or yellow onions but can be used in almost any recipe calling for onion!. Just cut off the stringy roots at the very bottom!.Www@FoodAQ@Com

Cut off the very bottom (the part with the roots on it)!. Then chop the rest, stopping at where they get floppy and not easy to cut!.
I hope you've got something to cook these with, like potatoes or noodles or something- they're kind of strong on their own and one doesn't really eat them plain!.Www@FoodAQ@Com

Green onions / scallions are great in any salad or as a garnish!. You can use most all of it, the white, minus the root end and the green 2/3 the way up!.Www@FoodAQ@Com
The green part has a milder onion flavor than the white, bottoms!. I love using both!. The green goes great in potato and macaroni salads, or quesidillas!. Both parts are usually used when cooking Asian food!.Www@FoodAQ@Com
You can cook them but they are better on salads raw!.
You can chop the ends off and then chop it upinto small pieces or just bits into them!.Www@FoodAQ@Com

you can eat all parts, they are better raw than cooked, chop the green part mix with grated chesse and make a sandwichWww@FoodAQ@Com
If you don't cook often, just use the white part at the end; just chop it up and use like regular onions!.Www@FoodAQ@Com
