Don't bother peeling your potatoes, just wash them then boil them in unsalted water until they are tender when pricked with a knife or fork!. Drain
Keeping the skins on while cooking guards against the potatoes becoming water logged!.
After they are cooked you may choose to remove the skins, but we're talking about mashed potatoes here,(not fine dining), and the skins are good for you!.
So mash them up with a whisk or a masher, and at this point you can decide to add cream and butter salt and pepper or white pepper, for traditional mashers!.
My favorite recipe is not to use cream or butter!.
I use olive oil, and lemon juice, then season with salt and pepper!.
It may sound a bit wierd but it is a fantastic combo, and it will really make a nice surprise for whoever you are cooking for because I doubt they have tasted mashers quite like this before!.
Served with a meat dish the lemon in the potatoes helps cut through the fat in the meat and enhances your meal!.
I hope you try my version, I know you'll enjoy them!.
Good luck, have fun!.Www@FoodAQ@Com

My secret is cream cheese, basil, sour cream, and butter!.
I use white potatoes (the smaller ones) that I cut into fours and boil until tender (but not too tender)!. I drain the water, and put the heat very low!. Then I add butter and cream cheese and sour cream, and I mash them like crazy!. This usually makes the potatoes less hot because of the cold dairy products!. Once it gets hot again, I add the basil and some pepper!.
People will gasp at how good the potatoes are!.Www@FoodAQ@Com

When mashing, the only things I add are butter, and heavy whipping cream!. Everything else is added by the individual by taste!. I dont measure, just add a lil at a time!. I look for them to be fluffy, no heavy, and not runny
My pet peeve is to get all the clumps out!. My potatoes must be perfectly smooth, no lumps at all!. To me, if they are smooth, i can add whatever else I want and they are perfect!. If they are lumpy, it doesnt matter what else I add, they will be crappy!.Www@FoodAQ@Com
