What role does salt play when baking bread?!

Tweet --- Salt plays two rolls in bread making!. #1 it brings out the flavor and keeps
bread from having that raw flour taste!.
#2 it regulates the action of the yeast!. When I made salt free bread for customers
on a salt free diet I mixed the dough colder
to slow down the action of the yeast!.
You will still need to activate the yeast
in a small amount of105*F water!.
But for the rest of the water or milk it should be at room temperature or about 70*F
For the first rise cover the mixing bowl with
a damp towel and let sit on counter to rise!.
then proceed as usual!.

It is not really necessary!. However, when following a baking recipe, the creator of that recipe probably put it in for a reason!.
Salt is used in bread usually to slow down the rising process!. Bread doughs can be ruined if they rise too quickly!.Www@FoodAQ@Com

I've made plenty of bread with out salt had no problems it just there for the taste it balances out the blandness of the flour, sugar is necessary for risingWww@FoodAQ@Com
