Question: I gotta buncha eggs! Ideas!?
My (future) mother-in-law just gave me two dozen eggs from her chickens!. I'll never get all those fixed before they go bad!. Any ideas for recipes that use a bunch of eggs!? Thanks!Www@FoodAQ@Com

All of these will use a lot of eggs, especially the eggs benedict!.

This may be the perfect time for you to try to make a hollidaise sauce(which goes with eggs benedict, and is also the base for bearnaise sauce), it may take you a couple of tries, but you've got enough eggs to do it!.

More satisfying would be the zabaglione, which is a fantastic dessert!. Cool it down and fold it into whipped cream to make a zabaglione mousse!.

Feed an egg to your dog!.

Make a frittata---you can google recipes for it but essentially, it's a great way to use up leftovers!.

Say you you have some leftover spaghetti, some leftover grilled chicken and some left over broccoli!. Get a large, over safe skillet and saute some chopped onion, garlic and peppers if you like, in a generous dash of olive oil!. Season well with salt and pepper (add some chili powder or crushed red pepper flakes if you like some heat)!. Toss in your left over chicken (cut into chunks), broccoli and pasta!. Toss to coat!. Scramble 6-8 eggs with a bit of milk and pour over the mixture!. Cook for a few minutes over medium heat until the eggs start to set!. Sprinkle generously with your favorite grated cheese and place in a 350 oven until the cheese is browned and the eggs are completely set!. You can make deviled eggs, boil up half dozen and peel cut in half and remove the yoke, mix the yoke with mayonaze or salad dressing and put about a Tbls of dried mustard or a couple tbls of liquid of liquid mustard mix well and stuff the empty egg shells with the yoke mixture sprinkle with papricka, or make lots of omlets lol!. good luck AprilWww@FoodAQ@Com

You cant beat a good old omellette:

Ingredients
2 Large Lion Quality eggs
Pinch salt and pepper
1 tsp cold water
Low Calorie Cooking Spray



Method

1!. Gently beat the eggs together with salt, pepper and a teaspoon of cold water!.

2!. Warm a medium frying pan over a high heat and spray with a thin coating of cooking spray!.

3!. Pour the egg mixture into the centre of the pan and cook over a high heat for 1-2 minutes!.

4!. As the egg begins to set, use a spatula to push the set egg towards the omelette centre!.

5!. Continue this action until the entire egg mixture is set!.

6!. Cook the set omelette for another minute, then loosen the edges with a spatula and fold the omelette in half!.

7!. Tilt the pan and slide the omelette onto a warm plate and serve immediately on its own or with a crisp green salad!.Www@FoodAQ@Com

Ice Cream!. It takes 18 eggs to make 2 QTS!. We used to have 41 chickens!. So we had to use 20 plus per day or give away!.

PS Eggs are usually good for two months if refrigerated!. The ones you get in the store are usually two or three weeks old, then they don't expire for at least a month!. So, you have lots of time to use them up!.Www@FoodAQ@Com

you can use store bought pie crust and you can keep them on the fridge for a couple of days or freeze them!.

Key Lime Pie

Serves: 8

I N G R E D I E N T S
Crust (or just get a premade one ;) )
16 graham crackers, crushed
3 tablespoons sugar
1 cube (1/4 lb) margarine or butter

I N S T R U C T I O N S
Mix the ingredients and press them into a 9" pie plate!. Bake in a preheated 350F oven for 10 - 12 minutes until lightly browned!. Place on a rack to cool!.

Pie
4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice (approximately 12 Key limes or you can buy a bottle of it)
2 teaspoons grated lime peel, green portion only

Whipping Cream For Garnish (Optional)
1/2 cup whipping cream
2 teaspoons granulated sugar
1/4 teaspoon vanilla

I N S T R U C T I O N S
Use an electric mixer and beat the egg yolks until they are thick and turn to a light yellow, don't over mix!. Turn the mixer off and add the sweetened condensed milk!. Turn speed to low and mix in half of the lime juice!. Once the juice is incorporated add the other half of the juice and the zest, continue to mix until blended (just a few seconds)!. Pour the mixture into the pie shell and bake at 350F for 12 minutes to set the yolks and kill any salmonella in the eggs!.

Now for the egg whites! Unless you want to make a mreingue out of them for that pie!.


Meringue Cookies

INGREDIENTS

* 2 egg whites
* 1/8 teaspoon salt
* 1/8 teaspoon cream of tartar
* 1 teaspoon vanilla extract
* 3/4 cup white sugar
* 1 cup semisweet chocolate chips (or nuts or whatever you want! Use your imagination)

DIRECTIONS

1!. Preheat oven to 300 degrees F (150 degrees C)!. To prevent burning you can bake on an air cushion baking sheet or put parchment paper on a regular cookie sheet!.
2!. Beat egg whites, salt and cream of tartar until very firm!. Gradually add sugar and mix!. Fold in vanilla chocolate chips!.
3!. Drop by teaspoonfuls on pan!. Bake 300 degrees for 25 minutes!. They should only be lightly browned!.Www@FoodAQ@Com
