Monfongo is made by mashing tostones (twice fried plantains) with garlic, olive oil, and chicarrones or bacon!.

3 green plantains
1 tablespoon crushed garlic
1 tablespoon olive oil
? lb!. chicharrón or cooked bacon (crumbled)
Vegetable oil for frying



First make tostones !. !. !. !.

Mix together the garlic olive oil and chicharron or bacon!.

Mash the tostones, a few at a time in the pilon (never use a food processor), adding a little bit of the garlic mixture!. You will have to work a few slices at a time!. When all done mix all the batches together for even distribution of seasoning!. Add salt if needed!. This is a side dish that needs to be served warm!. Keep forming balls until mixture is all used up!.

Serve with fried pork meat and fried onions, or with soup, or as a side dish…!.!. yummy!

Use this same recipe to make "Bolitas de Mofongo" to add to stews!. Shape the mixture into balls and drop in any soup!.

Mofongo
Yield 4 servings
Time About 1 hour

Mofongo is made with green plantains, which, unless you shop in a Latino market, is how you'll most often buy them!. If you keep them in the refrigerator, ripening can be retarded for weeks with no loss of quality!.

Ingredients

Salt
4 green plantains, peeled and cut into 1-inch chunks
1 pinch saffron, optional
4 cups well-flavored chicken stock
Oil for deep frying
4 thick slices bacon, or salt pork, prosciutto or cracklings
1 tablespoon chopped garlic
Freshly ground black pepper
Chopped fresh cilantro leaves for garnish


1!. Mix handful of salt into a bowl of cold water and soak plantain chunks!. Combine saffron, if using, and stock in saucepan over low heat, keep warm!. Bring at least 1 inch of oil to about 350 degrees in a deep skillet!.

2!. Meanwhile, cook bacon until crisp; remove and drain!. Remove plantain from water and drain, then deep fry the pieces (careful, they may spatter) until golden brown and tender!. While still hot, add to food processor with bacon, garlic and some salt and pepper!. You may have to work in batches!. Process to consistency of mashed -- not whipped -- potatoes!. Taste and adjust seasoning, then quickly shape into rough balls about the size of meatballs!.

3!. Place in soup bowls, douse with broth, garnish with cilantro and serve immediately!.

Ingredients:
(Plaintains with Pork Rinds)
3 green plaintains
1 teaspoon salt
1/2 lb!. Crisp fried pork rinds
4 cups water
3 garlic cloves
1 tablespoon olive oil
Optional: fried bacon, lard or vegetable oil

Directions:
1!. Peel plaintains!. Cut into one inch slices!. Soak for 15 minutes in salt and water!. Drain well!.

2!. Heat fat or oil(350 degrees if you are using a deep fryer)!. Add plaintain slices and fry for 15 minutes but do not brown!. Drain on paper towel!.

3!. In a mortar(for pounding), crush garlic cloves and sprinkle with salt, add olive oil to the mixture and keep pounding!.

4!. Crush a portion of the fried plaintains slices and the pork!. Add some of the garlic and olive oil mixture and keep pounding!.

5!. Spoon the mixture and shape into two inch balls!. Repeat steps 3 and 4 until you use all the ingredients!.

6!.Place in oven pan and keep warm until you are ready to serve!.

There are many varieties of Mofongo recipes, yet the one I learned the best is the very traditional way!. Here we go!.!.!.!.!.!.and PLEASE, DO NOT make this recipe with BOILED plantains!

Serve your Mofongo with anything you like but the most preferred side dishes are: Sautee Shrimp, Shrimp with butter and garlic sauce (yeahh mo' gaaahhlic), Carne frita (fried beef or pork chunks), Any Meat Stew, Lobster in butter sauce, Lobster in salsa, Ham hock stews, and Mondongo!.



Cooking Tips

1) As many people do, please do not soak peeled plantains in salt water!. There is no need to do so, but to increase the chance to burn yourself if water make contact with hot oil!. 2) Prepare all side dishes before hand!. Mofongo must be served sizzling hot or it will get hard!. 3) Unless you soak them in water, plantains will turn black if peeled before hand!. 4) Plantains (cooking bananas!.!.!.not eat-fresh Chiquita bananas) must be green!. Ripe to half ripe plantains will ruin your dish!. 5) You can use a food processor to coarsely grind the Chicharron and garlic, not the Mofongo itself!. 6) Mofongo prefersWooden Mortars!.

Ingredients

3 Large GREEN plantains, Salt to taste, 1/2 pound crisp Chicharrones (pork rinds), 5 cloves of garlic (more to taste), 1/4 cup olive oil, Lard, peanut or corn oil to fry!.

Preparation

Peel and cut the plantains as shown on picture on the right!. Deep fry in Lard or oil at medium heat!. Plantains should be cooked through but not crispy or browned (see pic)!. While the plantains are frying (10-15 mins) pound the Chicharrones and raw garlic in a mortar!. Add salt to taste!. Set aside!. Now is time to put everything together!.!.!.!.

Depending on the size of your mortar, add 2-3 pieces of fried plantains!. Pound until it starts loosing it's shape then add some of the garlic chicharron you just prepared!. Keep pounding until ingredients blend!. Repeat until plantains and Chicharrones mixture are finished!. Add Olive oil (a little at a time) to soften the Mofongo only if needed!. Serve directly in the Mortar or spoon out to form about 2 inches balls!. Serve with your favorite side side dish

Mofongo is actually made with plantains!. Not too ripe, not too green!. Take the ones that are pretty ripe, peel them and slice them then fry them!. Then take them and mash them with minced garlic!. It's delicious!. Just out of curiosity, mofongo is an old cuban recipe!. Where did you hear about it!?

cook your garlic in hot oil till golden but not burnt peel your plantain cut into cubes and add garlic and mash till smooth, you can add pork crackling to the top for a crispy bite!.Www@FoodAQ@Com

You cut up and deep fry some platains until crispy, then you grind them up almost like stuffing!. Add roasted garlic and salt!. If your preparing it with a meat make sure you baste it with the juices!.!.!.Enjoy!Www@FoodAQ@Com
