Question: Any recipes for Cooked tomatoes!?
I just want simple recipes using fresh tomatoes!. Nothing like a pasta dish, but what can I cook with the tomatoes in the oven that will taste very good as a side dish!.Www@FoodAQ@Com

8 med!. whole fresh tomatoes
1 pkg!. chopped frozen spinach, thawed & drained
1 can cream of mushroom soup
chopped onion
Parmesan cheese
salt & pepper
Scoop out center of tomatoes and salt them!. Mix spinach & soup & onions with pepper to taste!. Fill centers of tomatoes & top with Parmesan cheese!. Bake 20-30 min at 350Www@FoodAQ@Com

4 ripe red tomatoes
House Seasoning, recipe follows
3 tablespoons extra-virgin olive oil
5 cloves garlic, minced
2 tablespoons fresh thyme leaves
1/4 cup Parmigiano-Reggiano

Cut the tomatoes in half crosswise, season with House Seasoning!. Heat the oil in a small frying pan over medium heat!. Add the garlic, and cook until just starting to turn golden brown, 1 to 2 minutes!. Pour the garlic and oil into a heatproof bowl!.
Oil the grill and set for high heat!. Place the tomatoes cut side down and grill for 3 to 5 minutes!. Turn over, top with the garlic oil mixture and continue to cook for another 3 minutes!. Remove from grill and top with thyme, House Seasoning and Parmigiano-Reggiano!. Serve immediately!.


House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months!.

Fried tomatoes (Use ripe instead of green if they are firm)
Ingredients:

4 to 6 green tomatoes
salt and pepper
cornmeal
bacon grease or vegetable oil
Preparation:

Slice the tomatoes into 1/4 - 1/2-inch slices!. Salt and pepper them to taste!. Dip in meal and fry in hot grease or oil about 3 minutes or until golden on bottom!. Gently turn and fry the other side!. Serve as a side dish - delicious with breakfast!

Fresh tomato tart
1 store-bought or homemade dough for tart shell
8 to 10 ounces mozzarella cheese, shredded
2 tablespoons chopped fresh basil, plus extra for garnish
4 to 6 plum tomatoes, sliced 1/4-inch
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup extra virgin olive oil
Basil, chopped for garnish
Preheat oven: 400 degrees F!. Line loose bottom tart pan with dough rolled out 1/8-inch thick!. Spread bottom of pastry with shredded cheese and sprinkle with basil!. Cover with tomato slices, arranging to cover as evenly as possible!. Sprinkle tomatoes with salt and pepper and drizzle with olive oil!. Bake 20 to 30 minutes!. Watch carefully!. When crust is golden and cheese is bubbly, remove!. Garnish with fresh basil!. Slice in wedges and serve warm!.Www@FoodAQ@Com

2!.2 lb (1 kg) cherry tomatoes
5 sprigs thyme
3 cloves garlic
6 leaves sweet basil
Extra virgin olive oil
Fleur de sel and pepper

Stem and chop finely sweet basil
Peel garlic
Crush cloves and chop very coarsely into large pieces
Wash tomatoes and cut in quarters
Seed tomatoes
Place tomatoes on oven shelf after covering with parchment paper!. Space tomatoes far enough apart to prevent their touching
Sprinkle tomato quarters with pieces of garlic, thyme and chopped sweet basil!.
Dribble olive oil on all tomatoes
Sprinkle with coarse salt and pepper
Cook 4 hours in oven pre-heated to 200 oF (90 °C)!. Tomatoes are ready as soon as thoroughly dry!. Turn tomatoes at end of cooking if you notice skin side is still too moist!.

Mix together a little olive oil, salt, pepper, basil (fresh is best but dried is OK) and grated onion!. If you like lemon or lime with tomatoes, add some juice!.

Slice or chop your tomatoes and toss with what you just mixed up!. Bake until they're as tender as you want them!.

Fresh tomatoes are SOOO versatile!. You could add some breadcrumbs and fresh-grated parmesan to the above, and broil it for a minute !.!.!. or get some Buffala (fresh) mozzarella and melt that over it !.!.!.!.

1 pound of tomatoes

? hot pepper (or more ) I use a whole one but I like the hot!. If you do not like the pepper hot at all you could use bell pepper or devien and deseed a pepper to it wouldnt be so hot!.

1 meduim onion, finely chopped
3 cloves garlic, chopped
about 25 cumin seeds
2 tbls oil
salt to taste

Method:


Roast tomatoes for about 10 mins!. or until skins are easily peeled!. Peel them and mash them into bite size pieces into a bowl!.
Add onion and pepper and mix well
Heat oil in frying pan, add garlic until light brown, taking care not to burn it, a few moments later, after garlic has started to brown but not yet brown, add the cumin seed!.
Take off the fire and mix well with the tomatoes!.
