For the kind of salsa you're making (cooked as opposed to fresh tomato salsa) it really is just a matter of how thick you like it and how hot you like it!. Let it simmer down (don't boil it) without a lid on the pan, until it's the thickness that you want it!. The flavors will have a chance to concentrate this way, too - so the jalape?os are going to ramp up a bit as the liquid simmers out!.!.!.!.I make and can my own salsa every year, so this is really a matter of personal preference, but I usually simmer mine for at least an hour!.

and YES I AGREE that fresh tomato salsa is better by far - but for those of us that can to preserve our tomatoes throughout the winter, you have no other choice but to cook it!.! lol! lol! lol!Www@FoodAQ@Com

Try this too- this is GREAT tasting

-2 ripe mango's (peeled, 1/4 inch dice)
-3 tomatillo's (1/4 inch dice)
-1 red onion (1/4 inch dice)
-1-2 fresh jalape?os (seeded and small dice) to taste
-4 Roma tomatoes (seeded and 1/4 inch dice)
-1 bunch cilantro (chopped)
-S&P to taste
-Ground cumin (1/4 -1/2 teaspoon) or more to taste

Mix all together, allow to sit for 3-4 hours chilled!.
Very fresh tasting, little fruity, good spice to it!. Great with tortilla chips or on grilled fish

if you didn't drain the water out of the tomatoes you'll want to let it cook untill you've reduced your volume by about 20% a low simmerand stir every half hour or so!.Www@FoodAQ@Com

You don't cook salsa!. You mix it all up in a container and then let it sit for 30 mins or so in the fridge then enjoy!.Www@FoodAQ@Com
