A very dry white like a Pinot Grigio!. Can be expensive, but you should be able to find a bottle for under $10!. I find that the dryer the wine, the less it competes with the flavors of the seafood!. Definitely avoid any wine that is too sweet!.Www@FoodAQ@Com
I find that you should never use wine in cooking that you wouldn't actually drink!. It doesn't have to be super expensive but it does have to be at least good enough that you would want to have a glass!. I would like a dry white with fish of any kind!.Www@FoodAQ@Com

It is a drinking wine but the alcohol burns off and gives a gorgeous depth of flavour to seafood!.

I would use an inexpensive chardonnay!. You don't want to spend a lot of money on it, however you do not want it to be swill either!. An inexpensive riesling would work well also!.Www@FoodAQ@Com
