i have rhubarb and want to cook something for me and my son im bored of crumble and theres 2 much sugar in it my son is 8months old so cant realy have anything with sugar in it any ideas all ideas welcome!.!.!.thank you!.!.!.im looking for a healthy option!.!.!.!.Www@FoodAQ@Com

Rhubarb Strawberry Jam

Cook Time: 12 Minutes Ready In: 8 Hours 42 Minutes
Yields: 24 servings

"This rhubarb strawberry jam recipe is our favorite and so easy to make!."
INGREDIENTS:
5 cups chopped fresh rhubarb
3 cups white sugar 1 (3 ounce) package
strawberry flavored gelatin

DIRECTIONS:
1!. In a large saucepan or stockpot, stir together the fresh rhubarb and sugar!. Cover, and let stand overnight!.
2!. Bring the rhubarb and sugar to a boil over medium heat!. Boil, stirring constantly, for 12 minutes on low heat!. Remove from heat, and stir in dry gelatin mix!. Transfer to sterile jars, and refrigerate!.





Cinnamon Rhubarb Muffins recipe
1 1/2 cups all-purpose flour
1/2 cup plus 1 tablespoon granulated sugar, divided
2 teaspoons baking powder
1 1/4 teaspoons ground cinnamon, divided
1/4 teaspoon salt
1 egg, beaten
2/3 cup buttermilk
1/4 cup butter or margarine, melted
1/2 cup chopped fresh or frozen rhubarb, thawed and drained
1/4 cup peach preserves

In a bowl, combine flour, 1/2 cup sugar, baking powder, 1 teaspoon cinnamon and salt!. Combine egg, buttermilk and butter; stir into dry ingredients just until moistened!. Spoon 1 tablespoonful of batter into nine greased or paper-lined muffin cups!. Combine rhubarb and preserves; place 1 tablespoonful in the center of each cup (do not spread)!. Top with remaining batter!.

Combine remaining sugar and cinnamon; sprinkle over batter!. Bake at 400 degrees F for 20 minutes or until top of muffin springs back when lightly touched in center!.

Yields 9 muffins!.





Rhubarb Bread recipe
1/2 cup butter or margarine
1 1/2 cups brown sugar, packed
1 egg
1 teaspoon vanilla extract
1 teaspoon baking soda
1 cup buttermilk
2 cups all-purpose flour
1 1/2 cups coarsely chopped rhubarb (about 1/2 pound)
1/2 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon melted butter

Using a mixer on high speed, beat butter or margarine with brown sugar until creamy!. Beat in egg and vanilla extract!. Stir together baking soda and buttermilk!. Immediately add to the butter mixture, alternating with gradual additions of the flour!. Stir in the rhubarb!. Spread in a greased and floured 13 x 9-inch pan!.

In a small bowl, combine the 1/2 cup sugar, cinnamon and melted butter!. Sprinkle over batter!. Bake at 350 degrees F for 40 minutes, or until bread pulls away from sides of pan!.

Cool on a wire rack!.





Rhubarb Bread Pudding recipe
8 slices bread, toasted
1 1/2 cups milk
1/4 cup butter or margarine
5 eggs
1 1/4 cups granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 cups fresh rhubarb, diced

Heat over to 325 degrees F!.

Cut toast into 1/2-inch cubes and place in buttered 2-quart casserole!.

In a medium saucepan, heat milk and butter just to boiling!. Pour over toast cubes and let stand for about 15 minutes!.

In a medium bowl, beat the eggs!. Add the sugar, cinnamon and salt and beat together!. Stir in rhubarb!. Stir into bread mixture in casserole!. Sprinkle with nuts!. Bake in preheated oven for approximately 50 minutes!.

Let stand for 10 to 15 minutes before serving!. May be served with poured cream, if desired!.

Serves 6 to 8!.





Rhubarb Dream Bars recipe
1 1/4 cups all-purpose flour, divided
1/3 cup confectioners' sugar
1/2 cup cold butter or margarine
1 1/4 to 1 1/2 cups granulated sugar
2 eggs
2 cups finely chopped rhubarb
1/2 cup chopped walnuts
1/2 cup flaked coconut

Heat oven to 350 degrees F!. Lightly grease a 13 x 9-inch baking dish!.

In a bowl, combine 1 cup flour and confectioners' sugar!. Cut in the butter until crumbly!. Pat into prepared baking dish!. Bake for 13 to 15 minutes or until edges are lightly browned!.

In a bowl, combine sugar and remaining flour!. Add eggs; mix well!. Stir in rhubarb, walnuts and coconut; pour over crust!. Bake for 30 to 35 minutes longer or until filling is set!. Cool on a wire rack!. Cut into bars!.

Yield: 2 1/2 to 3 dozen





Rhubarb-Pineapple Jam recipe
5 cups rhubarb, finely cut
1 (20 ounce) can crushed pineapple
3 cups granulated sugar
1 small box strawberry or raspberry gelatin

Combine rhubarb, pineapple and sugar!. Let stand for 3 hours or overnight!.

Cook slowly for 15 to 20 minutes, then add gelatin!. When gelatin is dissolved, pack in clean jars and freeze or refrigerate!.





Spicy Rhubarb Pork Chops recipe
6 pork chops
1/4 cup water
5 to 6 tablespoons ketchup
2 tablespoons lemon juice
1/2 teaspoon salt
1 tablespoon grated onion
2 cups sliced rhubarb (1 1/2-inch pieces)
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1/2 teaspoon cinnamon

Mix water, ketchup, lemon juice, salt and onion together and marinate the pork chops for 1 to 2 hours (or overnight)!. Drain liquid!.

Combine rhubarb, granulated sugar, brown sugar and cinnamon!.

Place pork chops in a single layer in a 13 x 9-inch baking dish!. Pour rhubarb mix over pork chops and cover!. Bake at 350 degrees F for 1 1/2 hours!. Cover may be removed during the last 10 to 20 minutes of baking time if there is too much liquid!. Cooking liquid can be used as a sauce!.





Rhubarb Grilled Chicken recipe
Makes 8 servings!.

2 cups diced rhubarb
1 cup red wine or orange juice
2 cups granulated sugar
1/2 cup Dijon-style mustard
4 pounds boneless chicken breasts
1 tablespoon olive oil

Combine first 4 ingredients in a saucepan and simmer until rhubarb is soft!. Puree in a blender and set aside!.

Skin and lightly pound the chicken breasts!.

Oil the grill and cook chicken until just done, about 5 minutes per side!. Brush chicken with rhubarb glaze during the final minutes of cooking, and serve with remaining glaze!.Www@FoodAQ@Com

Doesn't rhubarb need some sugar!? It's really tart!. How about a rhubarb chutney!? You could serve it on top of porkchops for yourself, and maybe stirred into some applesauce for your son!.!.!.

***Rhubarb Chutney***

2 cups diced rhubarb
3/4 cup diced red apple
1/2 cup dried cranberries or cherries
1/4 cup finely chopped red onion
1/4 cup water
1/4 cup honey
1 tablespoon minced fresh ginger
2 teaspoons red-wine vinegar
1/4 teaspoon crushed red pepper, plus more to taste

Combine rhubarb, apple, cranberries (or cherries), onion, water, honey, ginger, vinegar and crushed red pepper to taste in a small saucepan!. Bring to a boil, stirring occasionally!. Reduce heat to medium-low, cover and simmer until rhubarb is tender, 15 to 20 minutes!. Uncover and simmer, stirring occasionally, until thickened, about 5 minutes more!. Serve warm or cold!.

NUTRITION INFORMATION: Per serving: 35 calories; 0 g fat (0 g sat, 0 g mono); 0 mg cholesterol; 9 g carbohydrate; 1 g protein; 1 g fiber; 1 mg sodium!.

***Stewed Rhubarb with Oranges***

Tart rhubarb and sweet marmalade marry perfectly in this delicious compote!. Try it stirred into plain Greek yogurt for a refreshing breakfast!.

4 cups diced rhubarb
1/2 cup orange marmalade
1/4 cup sugar
2 tablespoons water
Pinch cinnamon
Pinch nutmeg

Combine rhubarb, marmalade, sugar, water, cinnamon and nutmeg in a medium saucepan and bring to a simmer over medium heat!. Reduce heat to low, cover and cook until rhubarb is tender, 6 to 8 minutes!.Www@FoodAQ@Com

Without sugar, rhubarb doesn't taste very good!.

Rhubarb Cake
Ingredients
1/2 cup butter
2 cups brown sugar
2 eggs
1 cup buttermilk or sour milk
1 teaspoon soda
1 teaspoon vanilla
1/2 teaspoon salt
2 cups flour
1 1/2 cups raw rhubarb, cut small

Topping:
1/2 cup sugar
1 teaspoon cinnamon

Instructions
Cream butter and brown sugar!. Add eggs and vanilla!. Mix salt and soda into flour and alternately add milk and flour mixture to other ingredients!. Fold in rhubarb!. Mix topping and sprinkle on top!. Bake in 9x13 or 8x12 pan at 325 degrees for 40 minutes!.Www@FoodAQ@Com

If you take one part of rhubarb to three parts of sugar, it will probably still be too sour(!)

You can use honey if you want to, but the effect on the teeth and the tummy is still the same!.

If you use oatmeal in your basic boring crumble, and/or whole wheat flour, or add bran to your regular recipe, you'll be adding nutrients and maybe some variety!.

I love rhubarb in the spring, and have a gazillion recipes, from pies and muffins to chutney and jelly!. They all call for sweetening, and lots of of it!.Www@FoodAQ@Com

Make up 1pt of Semolina with :-
1pt Milk
2oz Semolina
Honey to sweeten!.
