How much of the shitake stem should i remove before stir-frying?!
should i just slice them off level with the bottom of the cap!?

take off the stem completely!
But be careful how you do it don't just rip it out! Use a knife and get as close to the end of the stem as possible and cut off!

slicing them off is fine just be sure to remove the whole thing they are to woody to eat!.!.!.you can save them for a good veggie stock in the future thoughWww@FoodAQ@Com
