Chop up several raw potatoes; peeling them is personal preference and optional!.
Chop up a cup or so of onions; the amount that you use is also personal preference!.
Set the taters and the onions aside!.
Brown up a pound or two of hamburger and drain well!.
Add the raw taters and onion and cook until taters are tender!.
(Add just enough water to the pot to keep the taters from sticking while cooking!.)
Add salt and/or other seasonings to taste!.

Boil some water then add potatoes!. Have the potatoes boil for about 10 minutes until just barely tender!. Remove and cut into 1/4 inch slices or dice or cut into quarters!. Saute in batches in about 4 tablespoons butter in a large frying pan!. At the same time saute the onions in the rest of the butter in a separate frying pan!. When both potatoes and onions are golden, put onto a serving dish and mix it together!. Season to taste!.
Pan-fried potatoes are more easily digested than French fried potatoes in boiled grease!.

Buttermilk Mashed Potatoes
Kosher salt
3 pounds boiling potatoes, such as Yukon gold, peeled
1/2 cup milk
1/4 pound (1 stick) unsalted butter
3/4 to 1 cup buttermilk
1/2 teaspoon freshly ground black pepper
In a large pot, boil 4 quarts of water and 2 tablespoons of salt!. Cut the potatoes into 1?”cubes and add them to the boiling water!. Bring the water to a boil again, lower the heat and simmer uncovered for 10-15 minutes, until the potatoes fall apart easily when pierced with a fork!.
Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil!. Set aside until the potatoes are done!.
Drain potatoes and mash w/ hand masher or food mill!. Stir in the hot milk-and-butter mixture with a whisk or rubber spatula!. Add enough buttermilk to make the potatoes creamy!. Add 2 tsp salt and the pepper, to taste, and serve hot!.

1 tsp!. grated lemon rind
3 Tbsp!. fresh lemon juice
1/2 tsp!. salt

1/8 tsp!. ground nutmeg
Peel a narrow strip around center of each potato!.
Cook potatoes in boiling salted water to cover 15 minutes or until tender; drain and keep warm!.
Melt butter in a medium saucepan over medium heat; add parsley and next 5 ingredients, and cook, stirring often, until thoroughly heated!. Drizzle over potatoes, and serve immediately!.

1 tbsp Mrs Dash onion herb seasoning
1/2 tsp salt and pepper
2 cups nonfat cheddar cheese -- grated
1/2 cup nonfat sour cream
2 tbsp chopped green onions
1 tbsp chopped parsley
Boil potatoes until just tender!. Do not overcook or they will fall apart!.
Preheat oven to 400 degrees!. Spray shallow baking dish with nonstick spray!.
Place potatoes in baking dish, sprinkle with herb mixture, salt and pepper!.
Place in oven about 35-40 minutes, until brown!. Sprinkle with cheese!. Bake
5 minutes more, or until cheese is melted!. Pour sour cream on top!. sprinkle
with green onions and parsley!.

1 package original hidden valley salad -- dressing mix
Wash potatoes; do not peel!. Slice crosswise!. Layer in a casserole dish!. Pour melted butter over potatoes and sprinkle with dressing mix!. Cover and bake at 350F for 1 hour!.

Yield: 4 Servings

2 1/2 tb Butter
1 Well beaten eggs
1/2 ts Salt
Scrub and dry potatoes, then bake 45 min!. at 425 degrees!. Cut off tops
lengthwise and scoop out middles!. Mash with the salt, butter, cheese,
cream and egg!. Beat until fluffy and replace in shells!. Bursh tops
with more melted butter!. Return to oven and bake 10 min!. longer,
until the tops are delicately browned!. Serves 4
Pizza Potatoes
1 pkg!. (5!.5 oz!.) scalloped potatoes
1 can (1 lb!.) tomatoes
1 1/2 cups water
14 tsp!. crushed oregano
1 pkg!. (4 oz!.) sliced pepperoni
1 cup shredded mozzarella cheese
Heat oven to 400o!. Empty potato slices and seasoned sauce mix into
baking dish 9x9x2"!.
Heat tomatoes, water, and oregano to boiling!. Pour over potatoes;
stir until well mixed!. Arrange pepperoni on top and sprinkle with
cheese!.
Bake uncovered 30 to 34 minutes!. Garnish with hot peppers, if
desired!.

2 cups of Smithfield Ham (any ham will work except Smithfield Country Ham, which is too salty), cut into small pieces
5 pounds Russet baking potatoes, peeled and diced
1/2 stick of butter
Salt and pepper
1 cup half-and-half
1/2 cup sour cream
STEPS
Place the potatoes in a large pot and add enough water to just cover the potatoes (too much water will make the soup too thin)!. Cover and bring to a boil, then uncover and cook over medium-high heat for 20 minutes!. Reduce the heat and add the ham and butter!. Season with salt and pepper to taste!. cut up an onion or two depending on how many potatoes you are making!.
you can bake them in the oven at 350 for an hour or till done!.
I like to Micro wave them 5-10 minutes till tender then put them in the 350 oven till the rest of dinner is done and the potatoes are soft and most of the juices are gone!.
oh and stir them a couple times to get the juices all over them & to keep them from drying out in the oven
