This is kinda like the marshmellow casserole but individual portions!.

Mash cooked sweet potatoes, with a tiny splash of milk, cinnamon, and cloves, and a tiny sprinkle of salt!. You want this to still be a kind of stiff mix!. ANd cooled is best to work with!.

Toast some coconut on a cookie sheet in the oven!.

Get a large marshmelllow and slap some mashed sweet potatos on it!. Then roll the mashed potato ball in the toasted coconut!.

Bake approx 15 minutes at 350, until thge potatoes are warmed and the mellow is a little melty!. But be careful not to over bake or it will become to gooey and messy!.Www@FoodAQ@Com

Vanilla Ginger Mashed Sweet Potatoes
The flavors of vanilla extract and ginger blend well with sweet potatoes!. This dish is sure to become a family favorite!.
Prep Time: 5 minutes
Microwave Time: 10 minutes

Makes 4 (3/4-cup) servings!.



Ingredients:
2 pounds sweet potatoes
2 tablespoons butter, softened
2 teaspoons McCormick? Pure Vanilla Extract
1 teaspoon McCormick? Ground Ginger
1/2 teaspoon McCormick? Thyme Leaves
1/4 teaspoon salt


Directions:
1!. Pierce each sweet potato twice with fork so excess steam can escape while cooking!. Microwave on HIGH 5 to 10 minutes or until tender, turning over halfway through cooking!. Let stand 5 minutes or until cool enough to handle!.
2!. Remove skin from the sweet potatoes!. Place sweet potatoes and remaining ingredients in large bowl!. Mash until smooth and well blended!.

To boil sweet potatoes: Peel and cut sweet potatoes into 2-inch chunks!. Place in large saucepan!. Add cold water to cover 1 inch over sweet potatoes!. Bring to boil; cover!. Cook on medium-low heat 20 to 30 minutes or until tender!. Drain!.






HAWAIIAN LUAU SWEET POTATOES

3 cans sweet potatoes, drained
1 can crushed pineapple, undrained
1/4 c!. vegetable oil
1/4 c!. melted butter
1 tsp!. salt
Dash of pepper
1/4 tsp!. cinnamon, nutmeg
1/2 c!. dry bread crumbs
3 tbsp!. brown sugar
Dash of cloves

Mash potatoes!. Stir in pineapple, 2 tablespoons of the oil, 2 tablespoons melted butter, salt, pepper, cinnamon and nutmeg!. Turn into a 2 quart baking dish!. Combine the remaining oil, butter with bread crumbs, brown sugar and cloves!. Sprinkle over top of potato mixture and bake at 350 degrees until browned on top!. Serve in mounds with ribs!.





MAPLE GLAZED SWEET POTATOES
Yield: 8 Servings

1/2 c Butter or margarine
32 oz Sweet potatoes; drained*
1/4 c Maple syrup
1/2 c Salted sunflower nuts

*Or 2 lbs!.fresh sweet potatoes, pared and cooked in water to cover
until tender!. 1!. Place butter in baking dish and place in oven to
melt as oven preheats!. 2!. Prepare potatoes!. They should be left whole
if small, or cut into 2-inch chunks if large!. 3!. Turn potatoes in
melted butter in baking dish until coated on all sides!. 4!. Drizzle
syrup evenly over potatoes 5!. Sprinkle with the sunflower nuts!. 6!.
Bake at 350' for 25-30 minutes or until heated through!. 7!. Transfer
to serving dish!.
Servings - 4 You can prepare the dish ahead and bake it just before





Roasted Sweet Potato Wedges

2 pounds sweet potatoes -- peeled and cubed
2 teaspoons olive oil
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon ground cloves
1/4 teaspoon ground black pepper

Preheat oven to 425!.

Peel and cube sweet potatoes and combine in a bowl with remaining ingredients!. Toss gently to coat!. Place wedges on a baking sheet and bake for 25 minutes or until very tender!.

Stewed sweet potatos


1 tablespoon olive oil
1 large onion, chopped (about 2 cups)
2 cups chopped cabbage 3 to 4 cloves garlic, minced
1 boiled sweet potato cubed
1 tomato diced
1 1/2 cups tomato juice
3/4 cup apple juice
1 to 2 teaspoons grated fresh ginger root
1/4 to 1/2 teaspoon red pepper flakes
2 cups frozen cut green beans
1/4 cup natural peanutbutter

Heal oil in a large skillet over medium-high heat!.
Add onion; Cook, stirring, until tender, about 5 minutes!.
Mix in cabbage and garlic; Cook, stirring, until cabbage is tender-crisp, about 5 minutes!.
Stir in sweet potatoes, tomatoes, tomato juice, apple juice, ginger, and red pepper flakes!.
Reduce heat to medium-low; Cover!.
Simmer until hot and bubbling, about 6 minutes!.
Stir in green beans and simmer, uncovered, for 5 minutes!.
Stir in peanut butter until well blended and hot, about 1 minute!.

SWEET POTATO SALAD

1 can sweet potatoes or yams
2 med!. lg!. red apples
1 c!. celery
1/2 c!. white raisins
1/2 c!. nuts (walnuts, pecans or almonds)
1 c!. lite salad dressing
Juice of 1 lemon or frozen concentrate

Cube cooked potatoes!. Dice celery and unpeeled apples!. Mix ingredients together!. Refrigerate and serve chilledWww@FoodAQ@Com

I watched that show on foodnetwork!.com ( down home with the neely's), and they made these!. I had to try them out the next day and they were awesome!! If you like the ingredients, i highly reccommend them!!

Twice Baked Sweet Potatoes

6 sweet potatoes, even in size and scrubbed
4 tablespoons brown sugar
4 tablespoons butter, room temperature
4 ounces cream cheese, room temperature
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Salt and freshly ground black pepper

Preheat oven to 375 degrees F!.
Place sweet potatoes on sheet tray and bake for 1 hour or until soft!. Remove from oven and let stand until cool enough to handle!.

Split potatoes and remove the flesh to a medium sized bowl, reserving skins!. In another bowl, add brown sugar, butter and cream cheese and the all of the spices and mash with a fork or rubber spatula!.
Add the butter and cream cheese mixture to the sweet potato flesh and fold in completely!. Add the filling back to the potato skins and place on a half sheet tray!. Bake for 15 minutes or until golden brown!.Www@FoodAQ@Com
