Attention cooks!?!
I need some help! My wife has agreed to try fish for the first time ever in her life!. I am going to either cook it at home or grill it outside!. I have both a charcoal and propane grill but I need some recipes to help kind of introduce her to fish!. Any ideas!?!Www@FoodAQ@Com

DO NOT start a reluctant fish noob with salmon! You probably already knew that!.
Mahi is a great choice for a first time fish recipe!. Grilling is good approach since it masks the "seafoody" flavor that usually turns people off to fish!. also, since the fish is usually cooked separately in grilled dishes, the fish flavor won't permeate the rest of the dish and keep it from becoming overkill!.
You could start with something simple and familiar, like adding grilled mahi to a caesar salad!. sprinkle the mahi with a little old bay or jerk seasoning, grill it, and lay slices on top!.
mahi makes great tacos and quesadillas as well!. something like that might be a good option as well !.!.!. you could make some other fillings and have it be a good dinner with some fish included, rather than be a fish-eating chore!.
it also makes good stir-fries !.!.!. its firm texture makes it stand up well to being tossed around a pan, and mahi is compatible with asian ingredients like ginger, garlic, scallions, and soy sauce!. you can substitute mahi for chicken in almost any stir-fry recipe!. kung bao mahi is really good, but the sauce is labor intensive!.
so i would say the thing is, simple, and straightforward, familiar, have some "safety" options on the plate, and you're on the right track with grilling!.

Grilled Mahi-Mahi, Ceviche-Style
4 skinless mahi-mahi fillets, approximately 2 pounds
2 teaspoons kosher salt
1/2 cup diced red onion
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1 tablespoon minced jalapeno
1/4 cup dark brown sugar, packed
1/4 cup tequila
1 tablespoon olive oil
1/4 cup freshly chopped cilantro leaves
Rub the fillets with kosher salt and set aside!. In a non-reactive bowl, combine the onion, lime juice, orange juice, jalapeno, sugar and tequila!. Mix to dissolve the sugar, and add the fillets to the bowl!. Marinate in the refrigerator for 2 hours, turning the fillets once after 1 hour!. Remove the fillets from the marinade and set it aside!. Pat the fillets dry with paper towels and lightly coat with the olive oil!.
Heat a grill to high and place the fillets over direct heat until they are just cooked through - opaque at the center but still moist, approximately 3 to 4 minutes per side!. While the fish is grilling, transfer the reserved marinade to a saucepan and heat until it is reduced to about 3/4 cup!. For a first-timer, stay away from stronger flavors such as salmon!. Mahi Mahi is good, but Tilapia is even milder!.
Marinade the fish for about 15 mins in your favorite marinade and make sure you oil the grill!. also, don't move the fish around once you place it on the grill!. Once the fish has gotten a nice sear on it, you will be able to release it from the grill without breaking it!. Moving it around will make the fish fall apart!.Www@FoodAQ@Com

I enjoy dover sole, tilapia, halibut, mahi mahi, & swordfish the most!.
Something easy that you could do is drizzle Italian dressing over the fish and bake it!.!.!.!. Some stores like Trader Joe's sell mahi mahi that is already marinated and it's super good!. if you are going to bbq it, I would suggest putting it on foil then just putting some lemon, butter, salt and pepper!. Or lemon, butter, and capers (rinse the capers before you put on the fish) serve with some pasta roni or rice and a veggie - light, healthy, delish - good luck! Season it with a little lemon juice and olive oil!. Use rosemary and pepper!.
After it's done, sprinkle a little parley to make it look nice!. Serve it with asparagus!.

lemon pepper to taste

Being it's her first time, I'm not a big fish eater, but I LOVE filet of sole!. I would try her on that and bread it and fry it!. What I do is, I buy it fresh, then dip it in flour, then the egg mixture, then the bread crumb mixture and then a pan with some olive oil and in a few minutes, it's done!.
I love it this way, and there's really no other fish other than fried shrimp that I'll eat, those are the only two that I'll eat!. So for someone that's not into fish, start mild!
By the way, don't forget to add some lemon to top when it's in the plate before she eats it!

Tell us what kind of fish you are cooking as you can cook many fish many differant ways! I grew up out in Seattle so I like salmon and cod ( nothing like Ivars Fish and chips)( we had trout there as well When I moved to wisc!.!. I loved catfish, all the pan fish and walleye is my fav!.!.!. I now live in PA and I love trout!.!.!. I would cook her a mild flavored fish if its her first time!.!.!. First and foremost I would go with a cod, it's very mild and even those who don't like other fish will often like cod!. The simplest recipe, and usually something that most people like is baked cod which is essentially baked in a little bit of butter with seasoned breadcrumbs on top!. Good luck!Www@FoodAQ@Com
I do not like fish, so I searched and searched until I found Orange Roughy which does not have that strong fish taste!. I put mine in foil with sliced onion on top, fold over and make a package out of the foil!. Only takes 20 to 30 minutes to cook well!.

FISH TACO'S!. use white fish like halibut or tilapia, season it with a Cajun season, i think emeril has one, toss the fish in it just before grilling!. small pieces will ensure even cooking though out fish, fresh shredded cabbage, some salsa and guacamole!. your set!.Www@FoodAQ@Com
I'm someone who does not really like fish or seafood at all!. But I once had bbq'd salmon at my brother's house and thought it was pretty good!. He brushed it with a lemon/butter mix as it barbecued (on a propane bbq)!. I was very surprised that I liked it!.Www@FoodAQ@Com
