Here is a great recipe that I found that starts from scratch and lists great variations below the actual recipe, such as replacing beef, adding corn or how to create it into a salad or casserole!.

Frito Pie
Recipe Courtesy of Emeril Lagasse

2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds beef bottom round, cut into 1/2-inch cubes
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/2 cup tomato paste
2 cups beef stock
2 cups canned dark red kidney beans
1 1/2 tablespoons masa
1 1/2 tablespoons all-purpose flour
1 bag Frito Chips
1 1/2 cup grated Monterey Jack cheese
6 tablespoons sour cream
1 small jar of jalapenos

In a large saucepan, heat the vegetable oil!. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt!. Season with salt and cayenne!. Stir in the beef , chili powder, cumin, crushed red pepper, and oregano!. Brown the meat for 5 to 6 minutes!. Stir in the garlic, tomatoes, tomato paste, beef stock, and beans!. Bring the liquid up to a boil and reduce to a simmer!. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender!. Skim off the fat occasionally!. Mix the masa and flour together with a little liquid from the stockpot!. Slowly stir in the masa slurry and continue to cook for 30 minutes!. Reseason with salt and cayenne!. Place a handful of the chips in each shallow bowl!. Spoon the chili over the chips!. Garnish with the grated cheese, sour cream and jalapenos!.Www@FoodAQ@Com

3 cups Fritos corn chips
3/4 cup chopped onion
1 cup grated cheddar cheese
2-1/2 cups chili (your favorite -- homemade, canned, whatever)

Directions
Preheat oven to 350°F!.
Spread 2 cups of Fritos in a baking dish!. Sprinkle half the onion and half the cheese over the Fritos!. Pour the chili over the onion and cheese!. Sprinkle the remaining Fritos, onion and cheese over the chili!.
Bake for 15 or 20 minutes and cheese is bubbly!. Serve hot!.
Top with more chees, sour cream, chopped fresh tomatoes and/or onions and peppers if you like!.

VIVA LA FRITO PIE

1 (15 oz!.) can chili, no beans
1 (15 oz!.) can chili with beans
3/4 c!. water
2/3 of a 12 oz!. pkg!. Fritos original corn chips
1 c!. chopped onion
3/4 lb!. cheddar cheese, grated
1 (8 oz!.) carton sour cream (opt!.)

Preheat oven to 350 degrees!.
Spray 1 1/2 to 2 quart casserole with Pam!. In saucepan, combine both cans of chili and water; heat to boiling, stirring occasionally!.

Place 1/2 of the corn chips in bottom of prepared casserole!. Cover with half the chili mixture!. Sprinkle with 1/2 cup onion and half the grated cheese!. Repeat layers, ending with grated cheese!. Bake for 25 minutes or until heated through!. Serves 4 to 6!.

TIP: After wedges of pie are cut, top each with a tablespoon of sour cream!. An excellent main course on a cold day!.Www@FoodAQ@Com

Directions

3 cups FRITO? brand corn chips, divided
1 large onion, chopped
1 cup grated American cheese
1 (15-ounce) can HORMEL? chili (any variety)

Preheat oven to 350oF!. Place 2 cups of corn chips in a baking dish!. Arrange chopped onion and half of grated cheese on the corn chips!. Pour chili over onion and cheese!. Top with the remaining corn chips and grated cheese!. Bake for 15 to 20 minutes

1 pound Velveeta cheese, cut in cubes
1 can (10 oz!.) Rotel diced tomatoes with green chiles
1 package (10 oz!.) regular size Fritos
2 cans (1 pound, 8 oz!. each) chili without beans or about 5 cups homemade chili
8 ounces cheddar cheese, shredded
Preheat the oven to 350F degrees!. Spray a medium-size baking dish with non-stick spray!. Combine the cheese and tomatoes in a saucepan (or see note below to use the microwave) and heat slowly until the cheese melts!. Heat the chili in another saucepan!.
Place half the Fritos in the baking dish!. Spoon half the chili over the Fritos!. Cover with a layer of cheese sauce!. (There will be cheese sauce left over to use as a dip!.) Scatter the remaining Fritos over the cheese!. Cover with the rest of the chili and sprinkle with the shredded cheddar cheese!. Bake uncovered about 30 minutes, until hot and bubbly!.
