Cheese Sauce?!

Melt some butter in a saucepan, add some flour (very slowly, stirring all the time) until it's a gooey blob, then (even more slowly) add some milk until the sauce thickens a little!. Then, just before the mixture comes to the boil add grated cheese to taste!.

I'm afraid I don't measure quantities:
1!. Melt a large knob of butter in a pan, remove from heat
2!. Add some plain flour, enough to look like soft balls when mixed with the butter
3!. Add a little milk and mix until the lumps are gone (I whisk with a wooden fork but you can use a hand whisk)
4!. Return to the heat and add a little grated cheese, keep stirring constantly until the cheese melts, add a little milk, then more cheese and keep going in this fashin, stirring all the time, till all the cheese is melted and you have enough sauce!.
DO NOT BOIL
I prefer to use more cheese than milk but mixture is up to you - to be honest I tend to only add milk once more!.
I also put in black pepper and some grated nutmeg about halfway through making it!.
The whole process takes around 10 mins!.

double cream (single cream splits when cooking) simmer and add a splash of milk and grated cheese you pick the strength depending on your required tastebuds!. When the cheese melts add a teaspoon of english mustard powder (not neccessary) and squeeze half a fresh lemon into your finished sauce!. Its bloody lovely i tell ya!.Www@FoodAQ@Com

Schwan is making a frozen cheese sauce that I am currently using!. Just put in a bowl and defrost in the micro or on veggies and cook in the micro!.
In a sauce pan, over medium low heat, melt any cheese with some milk!. You cook and stir as it melts!. Add more cheese or milk as needed!.

Or the old fashioned way is:
heat 1 oz of butter to melted, take off heat
add 1 oz!. plain flour and beat till it takes up all the liquid!.
Return to heat and add around 1/3 pint of milk slowly
stir continuously til it thickens
add 3 or 4 oz grated cheese and beat til all cheese has melted!.

Take 2 tbs!. of butter and melt it in a pan, then one it is bubbly mix in 2 tbs!. of flour!. Let that cook up for a few minutes to get the flour taste out, and then add a cup of cream or milk!. Let that come to a simmer, not boil, and then add shredded cheese that you like until it reaches the texture you want!.Www@FoodAQ@Com
whatever cheese you use its best to shred it first so it melts quickly, use very low temperature so it doesn't seperate and add it to a milk or cream base flavored with shallot, garlic and spices like paprika and cayanne!. good luckWww@FoodAQ@Com
