Question: Really need help regarding filet minon HELP!!!!!!!!!!!?
I wanted to make filet minon for my boyfriend on his birthday and i was wondering the proper way to cook it!. I guess you are supposed to broil it in the oven!? How long and what temp!?!? (I want mine med rare, he wants his well done) I know you are supposed to put a piece of bacon around it, can you hold it on with a regular toothpick or will it catch on fire!? also, can I put the baked potatoes in the broiler as well or do I need to put them in the oven!? PLEASE help me! The fillets were $15 and I really can't afford to screw up! also I will be making them on Tuesday, should I freeze them until then or will they be ok in the fridge!?!?!?Www@FoodAQ@Com

First, yes, you should freeze them!. Wrap them in foil or plastic wrap, then wrap again to make sure there is no air!. Then freeze!. Take them out of the freezer and place in fridge Monday afternoon/evening and they should be ready to go Tuesday evening!.

Forget what everyone is saying about buying a different cut of meat so that you can cook it well!. It sounds like you are on a budget, so go ahead and stick with your plan!.

You don't necessarily have to do a piece of bacon around it, and since I like to pan sear my filets, I usually don't!.

To pan sear, I let the meat come to room temperature for about 30 minutes!. I heat up a stainless steel pan or cast iron pan on medium high heat for about 5-10 minutes!. If you don't have one of those pans and you have to use a nonstick, keep the heat on medium and make sure that you put oil in before you preheat - I use a couple tablespoons of olive oil!. While the pan is heating, I sprinkle both sides with kosher salt and fresh ground pepper, liberally!. Then if using a stainless pan or a cast iron pan, swirl a couple tablespoons of olive oil around!. Then, place the meat in the pan and do not move it for about 4 minutes!. Then flip it and cook another 2-3 minutes on the other side!. I know your bf says that he wants his well done, but just give his another minute or so and then take it off!. Let the meat rest for about 5 minutes to seal in those juices!. It is always better to have them a bit underdone rather than overdone, and if his is too red for him (though I would encourage him to take a bite!) then you can either put it back in the pan or (gasp!) pop it in the microwave for about 30 seconds at a time!.

For the potatoes, you can either microwave those - for two med/large potatoes cook about 6-7 minutes and check for tenderness!. Be sure to pierce them before putting in microwave!. Or you can wash them, rub with oil (any will do), sprinkle with salt and pepper, pierce, and bake in a 350 oven for about 45min to 1 hour!.

also, I like to serve my pan seared filets with a horseradish sauce!. You can either mix horseradish with sour cream or mayo and serve it on the side!. It is delicious!

FREEZE THEM! If you keep meat in your refrigerator for almost an entire week, there's a good chance that it will -- well, maybe not spoil, exactly, but it will be "off" like it's about to spoil, and it will taste and smell just plain nasty!.

And no, you can't put the potatoes in the broiler to bake!. You'll have to bake them in the oven ahead of time and then just nuke them for a minute to warm them up again when you're ready to serve them!.Www@FoodAQ@Com

OMG, if he wants his meat well done, save your money and buy him a sirloin steak and cook THAT well done!. He won't be able to tell the difference anyway, w/ it THAT overcooked!

freeze them Tuesday is too far away, then start thawing Monday night in frig!. Yes you can wrap in bacon, optional, and yes, hold together with toothpick, soak about 1/2 hour in water to avoid burning of the toothpick!.
if you can't grill outside, then pan fry in a little evoo, use an instant read themomether to test for doneness, start his earlier since he likes well done!. well = 170', med = 160' but remove from heat 10' before the desired doneness, and make a tent with foil to let them rest about 5 min!. so the juices can redistribute and not run out when cut!.
you will need to bake the potatoes in 350' oven for at least an hour (poke a hole in them to keep them from exploding)

Chocolate Trifle (don't froget a candle in the center)
1 (19!.3-ounce) package brownie mix or crushed chocolate cookies
1 (3!.9-ounce) package chocolate instant pudding mix
1 (7-ounce) container frozen non-dairy whipped topping, thawed
1 (6-ounce) bag milk chocolate morsels
Prepare brownie mix according to package directions in a 9 x 13-inch pan!. Cool!. Crumble or cut into small pieces!.

Yes you can put a toothpick in it if you want to use bacon!.
The bacon is not necessary unless you like it!.

If they're steaks
Pan sear them on a high temp, then lower the temp!.
When you go to turn them, if they are sticking to the pan, let them cook longer until they loosen up!.
Put his in first!.
Cooking time depends on the thickness of the steaks!.

Freeze them, but make sure you thaw them the night before and take them out of the refrigerator about half an hour before cooking to get them up to room temperature!.

Since you want them cooked to two different donenesses, I would use two pans, and start his first!. Put an oven safe or cast iron skillet on the stove over medium high to high heat, season your steaks (I use salt, pepper, and garlic powder)!. Put a little oil in the skillet, just to coat, and get it hot!. Then add his steak and sear for about seven to eight minutes on each side!. Then toss his into an oven at 350 to 400 for about fifteen to twenty minutes!. That should cook his through, and you can do it in the same oven as the potatoes (just start them an hour or so before you plan on eating)!.

About ten minutes before his is done, get your skillet going the same way as his, but only sear yours for four to five minutes per side!. Make sure to let both rest for at least fiv e minutes before serving (probably won't make a difference with his well done steak, but yours will be juicy and perfect)!.

First of all, you need to freeze your filets!. When you are ready to cook them, defrost and make a rub of 1 tsp kosher salt, 1/2 tsp fresh ground pepper, 1 tsp beau monde, and 1/2 tsp garlic powder and rub the meat liberally!. Let them sit for at least 2 hours if not overnight!. You can wrap your filets in bacon if you want, but you don't have to!. Either grill them or broil them over a medium heat!. Depending on how thick they are, you'll need to grill them for between 5 - 7 minutes for medium rare and 7-10 minutes for well done!. If you depress the center of the filet with a spoon, the more they don't "give" the more cooked they are!. You might also consider a "surf and turf" menu and include either some jumbo or colassal prawns or cooked crab legs and cocktail sauce!. Great sides for filet mignon include caesar salad, baked potatos or potato casserole, fresh asparagas or fresh green beans!. Don't waist a filet mignon by cooking it well done!.!.!.!.get him a Ribeye instead!.

You can broil it!. probably 6min then 4min for rare to med rare!.

You wrap bacon around a filet mignon because it has no flavor!.!.!.that piece of meat is very very tender, but it has no fat!.!.!.which gives meat flavor!.

Cook them ASAP!. Freezing them would be fine, but its just no fun defrosting meat!.!.!.and you definately don't want them to get freezer burn!.

You need to bake your potatoes first!.!.!.400 degrees for an hour!.!.!.rub them with oil and salt and poke some holes in them with a fork!.!.!.should come out great!.!.!.
Then cook your meat!.!.!.you may need a sauce for your filet, but if you dont want to do that a mixture of salt pepper and garlic powder is good!.
with about 2min left of cooking your meat you can stick your potatoes back in the oven on broil to crisp up the skin and heat them alittle, but they wont get to cold while you cook your meat!.

If you end up getting a ribeye, cook it 8 min!. on each side or alittle less, and it'll probably be well done!.!.!.!.but you can't really mess up well done!.Www@FoodAQ@Com
