Good ideas for healthy meals?!


Question: Good ideas for healthy meals!?
the only ones i know is jacket potatos,shepards pie!. sunday roast and tuna pasta bake!.!.!.does any body know of any more tasty but healthy meals that i can cook for my and my bf!.!.!.hes a really fussy eater so il probably just leave the veg for him but i dont want him to be on chips for the rest of his life haha!.!.thanks!.Www@FoodAQ@Com

Angel Hair Pasta with Peppers and Chicken

INGREDIENTS
1 teaspoon olive oil
1 tablespoon minced garlic
1 large red bell pepper, julienned
3/4 (8 ounce) can sliced water chestnuts
1 cup sugar snap pea pods
6 thick slices smoked deli chicken
1 tablespoon onion powder
1/4 teaspoon ground black pepper
1 pinch salt
1 cup chicken broth
2 (8 ounce) packages angel hair pasta


In a large skillet, heat olive oil to medium high heat!. Add the garlic, bell pepper, water chestnuts and pea pods!. Reduce heat to medium low and cover!. Cook for 5 minutes!.
Cut chicken into strips, approximately 1/4 inch wide!. Add the chicken, onion powder, ground black pepper and salt to the skillet!. Cover and cook for 5 more minutes!.
In a separate small saucepan, heat the chicken broth to a near boil!. Pour the hot broth into the vegetable/chicken skillet!. Toss and serve mixture over cooked angel hair pasta immediately!.Www@FoodAQ@Com

I love to take spaghetti noodles and and cook them to just al dente!. once cooked I set them in a cooled water bath to shock them so they don't get mushy!.

In a separate bowl I add 1/4 cup of EVOO and the following ingredients to your taste: chalets, green onions, Italian parsley, sliced olives, drained canned mushrooms (or fresh ones if you prefer) and a little minced garlic!. combine well and pour over your pasta!.

Serve with baked chicken or baked pork chops or just add some more veggies (such as broccoli, tomatoes or asparagus) and have as a main salad dish!. It is really lite and it tastes great too!.Www@FoodAQ@Com

Here's a couple of healthy easy recipes:

Mexican Enchiladas

Ingredients:

1 410g tin of red kidney beans, drained
1 400g tin of chopped peeled plum tomatoes, drained
1 198g tin of sweetcorn, drained
2 cloves crushed garlic
1 finely chopped red onion
1 tbsp olive oil
1 tbsp Tabasco
Large bunch coriander, finely chopped
150g low-fat cream cheese
8 flour tortillas

PREPARATION:

1!. Place the olive oil and the red onion in a warm pan and allow the onion to soften for 2 minutes!. Add the garlic and red kidney beans and stir together!. Allow to cook for 1-2 mintues!.

2!. Add the tomatoes, sweetcorn and Tabasco and continue stirring!. Allow to cook for a further 3 minutes!. Finally, add the coriander and leave to cook for another minute!.

3!. While the ingredients cook, take the tortillas and place them under a hot grill for a minute to warm!. When ready, spread some cream cheese on each of the tortillas!.

4!. Spoon the bean mixture into the middle of each tortilla and fold to eat!.

Chicken Stir-Fry with Cashew Nuts and Mango

INGREDIENTS:

3 skinless chicken breast fillets, weighing 125g-150g each
1 tbsp cornflour
? tsp Chinese five-spice powder
4 tbsp vegetable oil
125g unroasted, unsalted cashew nuts
2 medium carrots, halved and cut into strips
4 spring onions, sliced diagonally
1 medium courgette, halved and cut into strips
125g sugar-snap peas
1 ripe medium mango, stone removed, quartered, peeled and thinly sliced
1 tbsp dry sherry
2 tbsp dark soy sauce
boiled or fried rice, or Chinese noodles, to serve

PREPARATION:

WARNING - sesame seeds are not suitable for small children who can choke on nuts!.
1!. Cut each chicken breast in half lengthways, slice very thinly and place in a bowl!. Mix together the cornflour and Chinese five-spice powder!. Sprinkle over the chicken and toss well together!.

2!. Heat 2 tbsp of the vegetable oil in a wok and stir-fry the chicken pieces for 3-5 minutes until cooked and lightly browned!. Remove from the pan and keep warm!.

3!. Add the remaining oil to the pan and quickly stir-fry the cashew nuts until lightly browned!. Add the carrots, spring onions and courgette and cook, stirring, for 3-4 minutes!. Stir in the sugar-snap peas and mango slices and cook for a further 1-2 minutes!.

4!. Return the chicken pieces to the pan and add the dry sherry and soy sauce!. Stir-fry for a further 3-4minutes, then serve at once with boiled or fried rice or Chinese noodles!.Www@FoodAQ@Com
