I have never thought to freeze extra heavy whipping cream before, but I would assume you could!. A very cool idea with using ice cube trays though!. (my extra usually sits in the refrigerator for a couple weeks and then finds its way to the sink)

The liquid molecules are made to stay in a certain way, whenthey are in the fridge!. When you freeze it, the liquid droplets qill become crystals!. Then, when you defrost it, the creamy-ness will go away, and your cream will have a frosty flavor, and it will certainly not be as smooth!.
So, I suggest you not to!.Www@FoodAQ@Com

That would probably work!.!.!.I still wouldn't keep the cubes any longer than you would keep milk in your fridge!.
You might spray some Pam on the ice cube tray before you pour the cream in, to make the cubes easier to remove!. Or line it with wax paper!.Www@FoodAQ@Com
